The calorie content of the dish depends on the type of meat used to prepare jellied meat:

  • When choosing a diet menu, it is better to give preference to beef jellied meat, because the fat content is minimal, and there is a large amount of healthy protein. There are 90 kcal per 100 grams of product.
  • In second place in terms of benefits and calories is the use of chicken meat to prepare jellied meat.
  • Jellied pork has the highest rate, but if consumed in moderation, for example, once or twice a week, it will not cause harm if a person follows a diet based on calorie counting.

Is it possible to eat jellied meat while on a weight loss diet?

When choosing a high-quality and low-calorie product, the broth with which the meat base is poured is important.

Preference is given to jellied meat, the broth of which does not contain gelatin as a thickener.

The basis is precisely the fat obtained from long-term cooking of meat and bones. Jelly (the name of the broth) in its finished form is a source of collagen, which is present in large quantities and has a positive effect on the body in terms of cell regeneration and giving elasticity to muscle tissue.

The higher the value of the meat used in cooking jellied meat in relation to dietary indicators, the less fat there is in and the more transparent the jelly. You can reduce the amount of fat even more if you strain the liquid several times and remove the fat layer from the surface of the dish after it hardens.

The use of gelatin for jellied meat, which will be consumed during weight loss, is undesirable.

Cooking recipes

It is recommended to keep the jelly in the refrigerator for at least 5 hours. It is better to make it in the evening and leave it overnight until it hardens completely.

Beef

To prepare beef jellied meat you will need the following products:

  • beef shin with meat - 800 g;
  • onion - 1 pc.;
  • beef ribs - 500 g;
  • carrots - 1 pc.;
  • black peppercorns - 5 pcs.;
  • garlic - 5 cloves;
  • allspice - 6 pcs;
  • bay leaf - 1–2 pcs.;
  • salt - 1/2 tsp.

The meat should be thoroughly washed, placed on the bottom of the pan and filled with water so that another 6–7 cm of liquid remains on top. Place the container on high heat and wait for the water to boil. After this, the fire is reduced to a minimum. During cooking it is necessary to constantly skim off the foam. The broth should be cooked for 6–7 hours. Additional ingredients in the form of onions, carrots and spices are added an hour before readiness.

The cooked meat is placed on a plate and separated from the bones. It is finely chopped and then placed in a container for jellied meat. Crushed garlic is sprinkled on top. The broth must be strained and then filled into the molds with meat. After the jellied meat has cooled, it is placed in the refrigerator.

Chicken

Chicken aspic can be prepared using the following ingredients:

  • chicken legs - 1 kg;
  • onion - 1 pc.;
  • carrots - 2 pcs.;
  • black peppercorns - 6 pcs.

Before you start cooking the broth, the legs should be washed well and then allowed to stand in cold water for 2-3 hours. Afterwards, they are washed again, filled with water, and the water level should cover the meat by 6–7 cm. When the broth boils, remove the foam from it, and then put the rest of the ingredients into it.

The heat should be so low that the surface of the broth does not boil, but only quivers slightly. This dish is cooked for 3 to 5 hours. Then the legs are removed and the liquid is filtered through cheesecloth. You need to add swollen gelatin to it (35 g per 300 ml of water).

The meat is separated from the bones, cut, placed on the bottom of deep plates and filled with broth. Then put in the refrigerator until completely frozen.

Pork

Pork jellied meat can be made from pork legs alone or with the addition of beef meat.

For this dish you will need:

  • pork legs - 2 pcs.;
  • beef bones with meat - 2 pcs.;
  • garlic - 4-5 cloves;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • allspice - 10 peas;
  • bay leaf - 1–2 pcs.;
  • salt - to taste.

The meat is washed under running water, placed in a pan, and poured with cold liquid so that it slightly covers the legs. Then they put it on high heat, wait until it boils, and skim off the foam. After this, the heat is reduced, after 1 hour carrots and onions are added. The broth should cook for another 3 hours. After this time, spices are added to it and cooked for another 1 hour.

The legs and bones are removed from the broth, the meat is separated from them and finely chopped. Then it is mixed with chopped garlic and distributed among the dishes for jellied meat. Pour the strained broth over the meat. The jellied meat must cool down, and only then it is placed in the refrigerator.

You should eat this dish little by little, since it has the greatest energy value.

The calorie content of jellied meat has a direct dependence on the recipe chosen for preparing the dish, on its proportions, and the peculiarity with which it is prepared also plays an important role. The energy value of this product is very important for overweight people or those on a diet.

Each of these types has its own energy value.

To correctly calculate its calories, it is necessary to sum up the indicators of the ingredients that were used. Consequently, these are bones, meat, cartilage, fat, as well as spices and other ingredients used for its preparation.

A significant difference is the calorie content of jelly prepared with chicken meat than the calorie content of jellied pork. The cooking method also affects their energy value. Hence the discrepancies in figures from different authors per 100 grams of product.

This means that while following the Kremlin diet, you can eat jellied meat in unlimited quantities. But it is worth remembering the dangers of cholesterol on the cardiovascular system and other organs.

The fact is that this technique does not prohibit the consumption of your favorite foods, but only at the time of breakfast and at one time. Several breakfasts with your favorite, but at the same time, unhealthy dishes are not allowed. Lunch and dinner are based on the principle of separate meals, when protein foods are allowed, but in compliance with the principles of the nutrition system.

To prepare Dukan jelly, it is not necessary to stock up on a whole carcass or its parts with a large amount of meat. The dish can also be prepared using simple necks. The taste will not suffer at all. In addition, the cooking time is much shorter. Only 2.5-3 hours. To prepare it you will need:

  • Necks – 1 kg;
  • Carrots and onions - one small piece each;
  • Garlic;
  • Gelatin – 3 tbsp;
  • Spices (allspice and bay leaf);
  • Salt.
  1. The recipe has the same cooking principle. Place the washed necks in water and immediately add vegetables and allspice.
  2. Immediately after boiling, the heat must be reduced to minimum, skim off the foam and continue cooking. 30-40 minutes before the end, add a bay leaf.
  3. We take out all the ingredients from the finished broth, strain and add salt. We separate all the meat from the necks and tear it randomly.
  4. Add gelatin and finely chopped garlic to the prepared broth. In order not to wait for swelling, you can take a small amount of broth in advance and pour gelatin over it. And then, melt it in the microwave or in a water bath so that all the grains dissolve, and pour into the broth.

Before pouring into molds, the meat broth can be strained from the garlic if desired.

Place the meat in a mold, fill it with liquid and let it harden. If desired, slices of boiled carrots can be added to the dish for decoration. Jellied meat according to Dukan from the necks, with the addition of gelatin, is ready.

The broth made from chicken legs is especially rich. However, it will not be possible to cook jellied chicken legs without adding additional parts of the carcass, since in this case we will not get meat that needs to be filled with broth. In this case, a meaty ham is perfect for the recipe. So, to prepare jellied chicken feet with gelatin according to Dukan, you will need:

  • 700 grams of legs;
  • Poultry ham – 4 large pieces;
  • Onion – 100 g;
  • Carrots (for decoration) – optional;
  • Spices;
  • Gelatin – 10 g.
  1. We wash the legs and place them in a saucepan. We do the same with the paws, only we trim the claws. Fill with water. Its level should be only slightly higher than meat products.
  2. Add the onion and cook according to the principle of previous recipes for about 5-6 hours. If the chicken is purchased (not homemade or soup), the cooking time can be reduced by 1-2 hours. As usual, add a few bay leaves and spices at the end.
  3. When the broth is filtered, pour about half a glass and dilute gelatin in it. After swelling, dissolve it in the microwave, pour it into the broth and heat up the entire meat broth.
  4. At this time, remove the meat from the bone and tear it into random, but small pieces. Arrange evenly among the molds. You can decorate as your imagination dictates. You can add herbs, carrots, fresh green peas and other ingredients. But you shouldn’t get too carried away, so as not to interrupt or spoil the main taste of the dish.
  5. Fill the molds with the meat with broth and leave to cool. When the jelly has cooled sufficiently, place it in the refrigerator. After standing in it overnight, the dish will completely harden. Dukan jellied meat is ready. Also, the recipe can be supplemented with turkey meat, then the taste will be more original.

Jellied meat can be served in various ways. For example, you can cut it into portions and serve it to the table without removing it from the container. Or you can put it on a flat plate.
