- For the vinaigrette sauce, take 1 chili pepper, divide in half lengthwise, remove the seeds, wash and chop with a knife. Mix 6 tbsp. l. juice, salt, a pinch of sugar and pepper. Add 4 tbsp. l. olive oil. Stir in chili. Mix Greek yogurt (100 g) with lemon juice and season with salt.
- Four green onions, peeled and washed, cut into small rings. Wash four sprigs of mint and parsley, dry them, and pick off the leaves. Coarsely chop the herbs and pistachios.
- Combine grapefruit slices, green onions, herbs and vinaigrette. Divide among plates. Take the meat from the pan, cut into thin slices, and place nicely on top. Pour yoghurt over fillets and sprinkle with pistachios.
Tip: if you don't have Greek yogurt, you can use thick sour cream.
Jam (about 2 kg)
- Wash 900 g of cherries and let the water drain from them. Then remove the cuttings, remove the seeds and chop. Peel one grapefruit (about 300 g) with a knife so that the white skin is completely removed. Scoop out the flesh and cut into small pieces. In total, you should get about a kilogram of pulp (cherry + grapefruit).
- Mix the fruit mass with 1 kg of gelling sugar, bring to a boil and cook for about 6 minutes at a bubbling boil. Then pour in 2 tbsp. l. cherry liqueur. Remove foam. Fill clean jars with hot confiture, close them with lids, turn them over and let cool.
