To prepare, you need to take 50 ml of olive oil (it is best to choose the extra virgin olive oil variety) and 100 ml of water. Such dough without baking powder must be rolled out into a fairly thin layer. It makes excellent closed versions of pies.

This is a kefir dough, which turns out more fluffy than the previous version. Whole grain flour is ideal for it, of which you need to take approximately 400 g for a pie with a diameter of 25 cm. Add 200 ml of kefir, 30 ml of vegetable oil without a pronounced odor, ½ teaspoon of salt and 1 teaspoon of sugar. Then take 1/3 tsp. baking soda and add 1 tbsp. l. vinegar - mix everything so that quenching occurs. Knead the dough. The proportions indicated above will give the consistency of the dough, which can be rolled out with a rolling pin or kneaded with your hands. But you can prepare a version of the dough with the consistency of pancakes. In this case, it is laid out in the mold with a spoon.
Both dough recipes are healthy because they do not contain yeast or white flour. In addition, the taste of the finished product may be slightly changed if other ingredients are used. For example, kefir can be replaced with fermented baked milk or yogurt. And instead of rye flour, you can use corn or oatmeal. But it is worth remembering that these varieties have very little gluten, so you should still take them no more than 1/3 of the total volume of the dry ingredient. And replace the rest with whole grain flour.
