Preparation:

  2. Beat eggs into a mixing bowl. Add sugar or a substitute, I use FitParad No. 10. A pinch of salt so that the dough does not turn out bland. Beat everything with a mixer until fluffy foam.
  3. Separately combine the dry ingredients: rice flour, corn flour, baking powder and vanillin. Corn flour gives baked goods a beautiful yellow color, but you can add just rice flour or any other flour of your choice.
  4. Next, add the beaten eggs to the cottage cheese. Stir and add flour in several additions. The finished dough should be quite thick, without lumps.
  5. Place the curd dough in the mold, cover the bottom and sides with parchment paper.
  6. We quickly chop the apples last so that they do not have time to darken. Cut into four parts, remove the middle, cut into thin slices. Next, place the slices beautifully at an angle on the dough, pushing them down a little.
  7. Place the mold in the oven, preheated to 170 degrees, bake for about 40 minutes. Check the readiness of the pie with a toothpick. When the cake has cooled a little, remove from the pan.

  2. Let's prepare the dough for the base. In a container, whisk the eggs and powdered stevia. Add the rest of the ingredients; first oatmeal, then bran, chopped dried apricots, baking powder and kefir up to 5% fat. Mix everything thoroughly.
  3. Peel sweet and sour apples from seeds and cut into thin slices. Next, place the slices on a plate and sprinkle with lemon juice to prevent them from darkening.

Charlotte for diabetics is prepared only from wholemeal flour; it is best to use rye flour or a mixture of rye and wheat (1:1 ratio). The baking recipe includes eggs, but diabetics know that only one egg per day is allowed. If the recipe calls for, for example, 4 eggs, you should take one whole egg and three whites, because protein has a low glycemic index (45 units) and is low in calories.

Classic charlotte is made from apples. Many diabetics are mistaken, preferring exclusively sour varieties; acid is not a sign of low sugar content. In addition to apples, you can also use pears, plums, and cherry plums. Fructose is used instead of sugar. If the recipe for making charlotte requires yogurt or sour cream, you need to take low-fat products or with minimal fat content.

Only natural sweetener should be used, because a synthetic product changes its composition during heat treatment and can be harmful!

  5. Grease the mold with vegetable oil; if you have silicone, you don’t have to grease it. Pour the dough into the mold and smooth it out a little. We lay out the apples, cut into thin slices, in the form of a flower, gradually moving towards the center. Sprinkle ground cinnamon on top if desired.
  6. Preheat the oven. Bake for 30–35 minutes at 170 degrees.

To prepare the cakes you need to take:

  • 200 grams of butter;
  • 400 grams of white flour;
  • 100 grams of wheat flour;
  • 200 grams of fat milk;
