Ingredients:
- Cottage cheese – 300 gr.
- Sour cream – 3 large spoons.
- Butter – 150 gr.
- Apples - 4-5 fruits.
- Eggs – 3 pcs.
- Flour – 2-3 cups.
- Soda – ½ teaspoon.
Preparation of charlotte:
- Mash the cottage cheese with a fork or grind using a sieve.
- Beat eggs and sugar until foamy. Melt the butter, cool slightly, and carefully pour into the egg mixture.
- Add grated cottage cheese, sour cream, baking soda. Mash the mixture thoroughly.
- Start adding flour. It’s hard to say how much it will take. Add in parts so that the mixture ends up quite liquid, like pancakes.
- Peel and cut the apples as desired. Add to the dough and mix.
- Pour the apple batter into an oiled pan or pan.
- Bake at 180 o C for about an hour.
What should you pay attention to when making charlotte pp?

Cooking secrets will make the pie less caloric.
Differences between a dietary dish and a traditional one:
- sugar is replaced with honey;
- flour is replaced with oatmeal in a 50/50 ratio;
- cinnamon, which can be added in small quantities, activates digestion;
- apples can be taken more sour, with a reduced sugar content;
- Oil should not be used in cooking.
Adding a variety of dietary products, such as cottage cheese and kefir, to a traditional pie recipe will radically change the taste.

Yeast apple pie with sour cream
A soft and fluffy yeast pie with apple filling will decorate both everyday and holiday tables.
To prepare a delicious dough with sour cream, remove the necessary products from the refrigerator in advance so that they become the same room temperature.
You need to prepare:
- 250 ml milk;
- 100 gr. butter;
- 180 gr. granulated sugar;
- 0.5 teaspoon of salt;
- 100 ml sour cream;
- 0.5 kg milk;
- 11 gr. instant yeast (one sachet);
- yolk for lubrication.
For the filling, prepare 1.2 kg of unpeeled apples, sugar to taste, and for serving you will need powdered sugar with cinnamon - 20 g.
Advice! When buying yeast, choose fast-acting yeast, which indicates that it should be mixed with flour. If you choose active yeast, then you must first dissolve it in liquid and only then use it to prepare the dough.
- This version of the dough is prepared without prolonged proofing. Moreover, it will be upset not in a warm place, but in the refrigerator. Pour the milk into a saucepan, add pieces of butter there and heat while stirring until the butter is completely melted. Remove the saucepan from the heat and pour the milk into a bowl for kneading the dough. Dissolve salt and sugar in it, add sour cream.
- Sift the flour and mix with a packet of instant yeast. Pour the flour and yeast into the milk mixture, stirring constantly.
- Advice! Before adding flour and yeast to the liquid, make sure that the liquid mixture is not hot, the temperature should not be higher than 38-40 degrees. Otherwise the dough will not rise.
- Knead the dough quickly, it will turn out very soft and will stick to your fingers. There is no need to add additional flour; after keeping in the cold, the dough will change its consistency. Place the dough in a bowl in the refrigerator for 45-60 minutes.
- While the dough is cooling, prepare the filling - peel and cut the fruits, put them in a saucepan, add a couple of tablespoons of water and add sugar to taste. Place on low heat and simmer for 15 minutes. The slices should become soft, but not fall apart. You can prepare the filling in the microwave - place the chopped fruit in a suitable bowl, mix with sugar and cook for 2-5 minutes, depending on the power of the oven.
- We will prepare an open pie. Separate a quarter of the dough, and roll the rest into a layer according to the size of the baking sheet or mold. Place the dough in a greased baking dish so that small edges are formed around the perimeter. Place the cooled filling on the layer. And from the reserved dough we will make flagella and lay them out in the form of a lattice.
- Let the cake stand for about 15 minutes and brush the surface with yolk. Bake at 170 degrees for about 45 minutes. Sprinkle the cooled pie with a mixture of powdered sugar and cinnamon and cut into squares.
