Are pancakes harmful or healthy?

The main advantage of the dish is its high nutritional value. Pancakes satisfy hunger well, so they make an excellent breakfast. In addition, flour products contain large amounts of potassium and calcium. As for the harm, excessive consumption of pancakes provokes weight gain. In addition, problems with the digestive organs may begin.

Today we will list the best ways to make pancakes. To make the dough, you will have to spend no more than 5 minutes. This is a real find when you need to get ready for guests or quickly make breakfast. Most often, the main ingredients are wheat flour and cow's milk. Various fillings can be added to the dough to change the taste.

Nutritional value of pancakes

Any housewife knows that the main components of pancakes are as follows:

Fermented milk product or sour milk.

Eggs contain a large amount of protein and amino acids. But you can do without them. This will reduce the calorie content of the pancakes. Without eggs, pancakes are no worse than with them. But fermented milk products contain a lot of mineral compounds and proteins. At the same time, kefir or sour milk is the main component of this dish; you cannot do without it. The situation is a little worse with flour. Wheat flour is rich in carbohydrates, which provide a large amount of unnecessary calories, and it contains few vitamins. Therefore, to reduce the calorie content of pancakes, wheat flour can be replaced with rye flour and oatmeal added. The amount of fiber will increase, which will have a beneficial effect on the functioning of the gastrointestinal tract.

It is difficult to imagine Russian cuisine without delicious and aromatic pancakes. This dish is traditionally eaten at Shrovetide, but this does not mean that pancakes will not be appropriate at other times. Interestingly, dishes similar to pancakes are found in many other cuisines around the world. Essentially, pancakes are small flatbreads made from liquid dough. The calorie content of pancakes is determined by the ingredients that are included in their composition. There are also certain requirements for the process of preparing this dish. So, it is recommended to fry the pancakes over medium heat so that they cook evenly. But they should be served with sour cream.

Classic pancakes have existed in Russian cuisine for centuries. However, during this time, many “non-traditional” recipes for pancakes have appeared, which are no less tasty and can compete with the pancakes that our great-great grandmothers prepared. Today it is possible, for example, to reduce the calorie content of pancakes by changing the traditional recipe. Since many modern products have come out recently that were not known about in the past, this will not be difficult to do. And some people prefer not to count how many calories there are in pancakes, but to cook them so tasty that they are simply “finger-licking”. To do this, jam, apples, dried fruits, etc. are added to the pancakes. The result is truly wonderful, and one more is added to the number of pancake recipes.

In different countries of the world, pancakes exist under different names and each country has its own subtleties in their preparation. The difference lies not only in the calorie content of the pancakes, but also in how and with what they are consumed. For example, in Norway pancakes are served with blueberry jam, in the USA pancakes are eaten with maple syrup, and the British use exclusively apple jam. Few people count how many calories are in pancakes with jam or syrup. It’s just that this dish turns out so delicious that it’s impossible to deny yourself it.

Cooking fluffy pancakes with milk

Despite the variety of prepared products, home-baked goods remain popular.
It always turns out delicious if you follow the cooking tips. Consider a popular recipe for pancakes made with cow's milk and baking soda. However, the base can be any other dairy product - for example, kefir. The result is invariably magnificent. After frying, pour sour cream over the flatbreads and wait a little until the dough is soaked. It will become very soft and sweet. To prepare you need to take:

  • 2 cups wheat flour;
  • 2-3 chicken eggs;
  • 2 glasses of cow's milk;
  • 1/2 teaspoon of soda;
  • Sugar, salt - to taste;
  • Vegetable oil for greasing the surface of the pan.

Preparation:

  1. First of all, break the chicken eggs. Pour the contents into a deep, clean bowl to avoid splashing when whipping. Add dry ingredients - sugar and salt.
  2. An ordinary whisk is suitable for stirring. It is not necessary to use a mixer. Whisk the mixture until a lot of bubbles appear on the surface.
  3. Pour in the milk. However, it can be replaced with kefir if necessary. Stir the mixture again with a whisk. The main task is to achieve complete dissolution of solid inclusions that spoil the structure of flour products.
  4. If you decide to cook pancakes with cow's milk, be sure to quench the soda with vinegar. If you use kefir, add a small amount of baking soda to the mixture without slaking.
  5. After adding soda, pay attention to the thickness of the mixture. The dough should be medium - not thick, not liquid. Its consistency should resemble sour cream
  6. Grease the bottom of the pan with vegetable oil. Reheat over medium heat. Then start scooping the dough onto the hot surface with a tablespoon. The flatbreads expand quickly and are fluffy. It is impossible to name the exact cooking time - experienced cooks use their eyes. When the cakes are browned on the bottom, turn them over with a spatula. Place the finished flour products on a plate.
  7. It is recommended to pour the finished donuts generously with sour cream or simply sprinkle with granulated sugar. Experiment with garnishes to complete the dish. You can place your favorite berries on top, which, in addition to their bright color, will give the baked goods a completely new taste. For example, pomegranate seeds work well.
  8. There is an interesting way to serve pancakes using sour cream. First of all, you need to make a sweet mixture - combine sour cream with sugar and mix well. Then dip each flour product into the prepared mixture. Thanks to this impregnation, the pancakes will become much softer and juicier.
  9. If you plan to make a lot of fried tortillas for a large family, increase the amount of ingredients proportionally. For example, to prepare the dough, take about 1 liter of cow's milk. Increase the amount of remaining ingredients by 2 times.

Cooking recipes

It is difficult to meet a person who would not treat himself to “little suns” - pancakes. This is a very quick and economical dish. Lightweight and simple to perform. Anyone who loves this delicacy, but is used to counting calories, will be interested in the following recipes.

Classic water pancakes recipe

This recipe can be classified as “quick”. The recipe does not use yeast, so there is no need to wait for the dough to rise. Slaked soda makes the pancakes fluffy.

Ingredients:

  • eggs - 3 pieces
  • water - 0.75 liters
  • high quality flour - 350–450 grams
  • sugar - 20–75 grams
  • soda - 1 teaspoon
  • vinegar or lemon juice - 10 ml
  • salt - to taste
  • sunflower oil - for frying

Preparation:

Add sugar and salt to warm, slightly heated water. Stir, beat in the eggs and mix well with a whisk. Quench the soda with vinegar (lemon juice) and add to the mixture. Stirring continuously, gradually add flour (so that lumps do not form). Place small pancakes in a well-heated frying pan with a tablespoon and fry until cooked on both sides.

Advice! The pancakes will absorb less oil if you add a couple of tablespoons of oil directly to the dough before frying.

Fluffy water pancakes without yeast

Pancakes are usually prepared with kefir, sometimes with sour cream or milk... But you can also prepare very tasty and fluffy pancakes with plain water. Moreover, such a recipe will be without yeast, using soda, so the dough is prepared quickly and easily, and it always works. In addition, these pancakes do not contain eggs, so you can safely eat them during Lent.

Ingredients:

  • wheat flour - 250 grams;
  • water - 200 ml;
  • citric acid - a pinch;
  • salt - a pinch;
  • sugar - 1 tablespoon;
  • soda - 1 teaspoon;
  • vinegar - 1 teaspoon;
  • vegetable oil - 4-5 tablespoons (1 for the dough, the rest for frying).

Preparation:

Pour warm water into the bowl of a mixer or food processor and add citric acid. Using a mixer, beat until the crystals are completely dissolved. Add flour little by little, stirring. Add salt, sugar and slaked soda, mix. Then add a tablespoon of vegetable oil and beat the dough thoroughly.

The dough should be like thick sour cream. You may need more or less flour, depending on its quality. If the dough turns out liquid, add flour little by little, 0.5 tablespoon at a time, mixing the dough thoroughly. If the dough is too thick, add a little water and beat again. Set the finished dough aside for 10 minutes.

Heat a frying pan with vegetable oil. When frying pancakes, vegetable oil should always be in the pan. If there is no oil left at all, the pancakes will burn and turn black, and if there is too much oil, they will turn out too greasy. Therefore, add oil often, but little by little.

Place the dough on a hot frying pan with a tablespoon at a considerable distance from each other - so that it is convenient to turn the pancakes over. Fry the pancakes over low heat until golden brown. Then carefully turn the pancakes over and, reducing the heat, repeat on the other side.
