But fermented baked milk is known not only for its taste, it is also a healthy product that contains probiotics and prebiotics. These substances have a positive effect on the immune system, stimulate digestion, improve the condition of the skin and are responsible for the biosynthesis of vitamins.
Ryazhenka is a product that is almost certainly present in the diet of every athlete. Fermented milk drink normalizes the functioning of many organs, which leads to excellent health and increased performance.
But like all other products, in some situations fermented baked milk can cause harm to health. Who can drink fermented baked milk, and who should refrain from drinking it? What is the role of this fermented milk product in sports nutrition? What is the chemical composition of the drink? Let's find out!

Ryazhenka is one of the most common fermented milk products. It is made from baked cow's milk, to which a starter is added: Bulgarian bacillus, thermophilic streptococci.
The finished drink has a creamy hue and a taste reminiscent of kefir, but with caramel notes.
Most often this product is compared with kefir, Varents and yogurt.
What is healthier – fermented baked milk or kefir
These drinks are similar in composition and equally healthy. And they differ, first of all, in the method of preparation: kefir is made from whole milk and special kefir grains. It has higher acidity and takes longer to digest, but fermented baked milk contains more calories.
You should choose it if you have high stomach acidity; kefir is more suitable for your diet.
Difference from Varenets
Varenets is also similar to fermented baked milk. There are slight differences in the ripening process and traditional fermentation: sour sour cream was always used to prepare fermented baked milk at home, and cream was always used for Varenets.
In addition, fermented baked milk is higher in calories and has a sweetish taste of milk.
Diets based on fermented baked milk
The multivariate calorie content of the drink, the ability to gently cleanse the body, and satisfy the feeling of hunger will allow it to occupy its rightful place in dietary nutrition. Personally, I prefer gradual weight loss, which is gentler on the body than intense fasting. Just drink a glass of sour milk as a snack, or instead of a heavy dinner. This will speed up metabolism, remove toxins, and the energy value of fermented baked milk will help satisfy hunger.
Important! Low-fat dairy products do not guarantee weight loss benefits. Manufacturers often add sugar to improve the taste. Therefore, pay special attention to the composition of the drink or make it yourself, choosing natural ingredients.
Contraindications for use
The benefits to the body from fermented baked milk significantly outweigh the threat of harm to it. However, here too the other side of its advantages should be taken into account. This applies to individual intolerance to lactose and milk protein. You should avoid consuming fermented baked milk with a fat content of more than 2.5% if you are obese or need to lose weight.

How to cook at home
We don't always have time to make our own sour milk. But I still advise you to try making fermented baked milk at home at least once to make sure that its taste and healing properties will be significantly superior to the store-bought drink.
It can be prepared in two ways.
In the oven
You will need 2 liters of fresh village milk and 2 tablespoons of full-fat sour cream.
- Pour the milk into an enamel bowl and bring to a boil.
- Reduce heat and simmer the liquid for 15 minutes.
- The milk should take on a beige tint.
- Remove it from the heat, pour it into a ceramic or earthenware bowl, and place it in the oven preheated to 180 degrees for one and a half to two hours.
- During this time, a light brown film should form on the milk.
- Remove it from the oven and cool to 40 degrees.
- Add sour cream.
- Mix thoroughly.
- For the starter to start working, cover the container with a blanket and leave it in a warm place.
If you did everything correctly, then in 10 hours the drink will be ready.
In a slow cooker
A modern multicooker reduces the cooking time for fermented baked milk and simplifies this process.
- Pour milk into the machine’s container, select the “milk porridge” or “simmering” mode for 3 hours.
- Remove the container with liquid from the multicooker, cool to 40 degrees and add sour cream at the rate of 1 tablespoon per 1 liter of milk.
- Close tightly and leave for 8 hours.

Application in home cosmetology
The properties of the product are actively used in beauty recipes. It has a beneficial effect on skin and hair even when used internally. It has an even more noticeable effect if applied externally.
Face masks
Products based on the product help smooth out facial skin, remove the first wrinkles, even out skin tone and refresh the face. For example, the following moisturizing mask is suitable for all skin types:
- 50 g of fermented milk product is mixed with a large spoon of ground oatmeal;
- add 2 drops of lemon essential oil;
- spread over clean skin with massage movements and leave for a quarter of an hour.
When used twice a week, the mask will noticeably rejuvenate your facial skin and give it a healthy glow.
Facial scrub with fermented baked milk
To remove blackheads and make your skin smoother and softer, the product can be mixed with fine sea salt and massaged into your face with a homemade scrub for a few minutes. The product will cleanse the skin and remove dead skin particles from it. It is optimal to use the mask every 3 days, then the effect will be stable.
Ryazhenka for beauty and health of hair
When applied to the scalp, fermented baked milk deeply nourishes the hair roots, returning strength and volume to the curls.
- At home, you can apply simple heated fermented baked milk to your hair twice a week and keep it for half an hour, wrapping your hair in cling film and a towel. After this, you will need to wash your hair thoroughly with warm water.
- You can also make a useful mask for increasing hair volume from 1 cup of fermented milk product, a large spoon of burdock oil and 1 egg yolk. The mixture is distributed over the hair and kept under film for 40 minutes, and then washed off using light shampoo.

Body peeling with fermented baked milk and coffee
A useful product will help soften the skin not only on the face, but throughout the body. The cleansing and nourishing product is prepared as follows: 1 large spoon of freshly ground coffee is mixed with 2 large spoons of fermented baked milk, and then distributed over problem areas of the body and left for 10 minutes.
Wash off the peeling with warm water without using hygiene products; it is recommended to carry out the procedure twice a week.
Bath with fermented baked milk
To improve the condition of the skin, make it soft and velvety, you can add 1 liter of low-fat fermented baked milk to a warm bath. They take such a bath for a quarter of an hour, after which they rinse in the shower.
