Dietary beef dishes: tasty and healthy dishes for weight loss

PP goulash is an ideal option for proper nutrition. With this dish you will significantly diversify your diet, make it tasty and healthy.

What is goulash? In general, this is a thick Hungarian soup made from meat, with the addition of onions and potatoes. Since goulash is prepared with pork lard, it cannot be called a dietary recipe. This is a very satisfying and nutritious dish that clearly does not fit into a healthy diet. The goulash we will be preparing is a stew of meat and vegetables. This is a lighter version of classic goulash, without adding potatoes and pork lard. True, we will still fry the meat, but in a small amount of vegetable oil.

Since our dish should be dietary, it must be prepared using the right ingredients. The main ingredient is meat, which means we need lean meats. So, beef, veal, chicken, chicken fillet, turkey are ideal for this dish. You can also add low-fat sour cream or natural yogurt to goulash.

You can serve PP goulash with buckwheat, brown rice, quinoa and bulgur!

Dietary beef goulash with gravy

For this simple and delicious recipe you need to prepare the following ingredients:

  • 600 grams of meat. It is ideal if the meat is without veins. Wash and cut into cubes.
  • 1 medium carrot. Wash, clean and grate on a medium grater.
  • 1 medium onion. Clean and cut into thin half rings.
  • 1 bell pepper. It is best to use red, it is more fragrant. Wash, peel and cut.

  • 1 tablespoon flour. We will use rice flour as it is very delicate.
  • 2 tablespoons olive oil. This amount will be enough to fry meat.
  • 1 glass of warm water.
  • Salt and spices to your taste.

First of all, we will need to prepare tomato and red pepper puree. This will be our dietary and healthy sauce for goulash, which will be an ideal gravy! To do this, simply grind these two vegetables in a blender until pureed. By the way, this option is also suitable for children who do not really like these vegetables.

Now let's get to the meat. It is best to fry meat in a non-stick pan. Pour in olive oil and fry the meat on both sides. Don't forget to stir constantly. When a crust has formed on the meat, you can add carrots and onions to it. Fry until the vegetables become soft. While the vegetables are cooking, fry the flour in another pan. Add it to the vegetables, pour in our pp sauce, a glass of water and add your favorite spices. Simmer the goulash for 40 minutes.

Sauces for diet 5 types and characteristics

If you read the detailed description of the “fifth table” diet, you can find many different sauces. We will present some of them - the most basic ones - and briefly describe what they are.

  • Rice sauce is quite specific, but recommended on the “5th table”. For it, white rice is taken, washed and boiled to a porridge state, and then rubbed through a sieve. Butter is added to the finished mass and salted, and used as a dressing for dishes. However, do not forget that white polished rice is a very high-calorie and carbohydrate product, and also mucus-forming. So, perhaps, you should not get too carried away with this gravy, and it is unlikely that you will be delighted with its taste.
  • Dressing made from boiled eggs, herbs and broth. The broth can only be light - from lean meat, ideally chicken. Boiled eggs, finely chopped, and chopped fresh herbs, as well as salt, are added to it. It sounds delicious, but it's more like a light soup than a sauce. Although, for a salad or vegetables – it’s absolutely fine, why not! You can’t have a lot of eggs on the “5th table”; they are allowed only in limited quantities, so you shouldn’t cook this dish often.
  • Milk-tomato gravy is very tasty and tender. It is based on milk, flour, butter and a little natural tomato, as well as salt and herbs. Even without a diet, this sauce will become a favorite among all gourmets, and it goes well with any dish - poultry, fish, vegetables, pasta and cereals. We will look at it in more detail later and share its original recipe.
  • Sour cream and apple dressing with herbs is very tasty, ideal for salads, but it also goes harmoniously with other dishes. It is prepared on the basis of sour cream diet sauce, the recipe for which we will describe in detail below. Only an apple is added there, peeled and grated on a fine grater. And some fresh herbs. Very fresh, tasty and healthy!
  • Protein sauce with broth - its recipe is quite specific, but it is given in the classic description of the “5 table” diet. According to the recipe, you need to grind the boiled egg whites, mix with chopped fresh herbs, add a little hot meat broth and butter. Mix all this and salt it, and use it as a topping. It might be delicious, try it!

PP chicken or turkey goulash

If you want to make low-calorie goulash, it is best to use chicken or turkey meat. Chicken fillet is perfect! So, you need to prepare the following ingredients:

  • 500 grams of chicken fillet. Wash and cut into thin pieces.
  • 1 large carrot. Clean and grate.
  • 1 medium onion. Clean and cut into half rings.
  • 50 grams of tomato paste.
  • 50 grams of low-fat sour cream.
  • 1 tablespoon of vegetable oil.
  • 1 tablespoon rice flour.
  • Salt and spices to your taste.
  • Glass of water

Fry the chicken fillet in a frying pan with one spoon of vegetable oil. As soon as the meat becomes a little golden, add onions and carrots to it. Fry for another 3-5 minutes. Then add a spoonful of flour and mix thoroughly. Pour a glass of water over the meat, add tomato paste and sour cream. Mix everything thoroughly, add salt and pepper. Simmer for about 10 minutes.

Beef goulash just like in kindergarten

In kindergartens, cooks prepare ordinary food in a special way - this is a fact. We remember many dishes from childhood. And if you pick up your child or grandchildren from kindergarten, you probably smelled this wonderful aroma from the kitchen. Beef goulash is also prepared for children. We will try to repeat the preparation of this dish exactly as they prepare it in kindergartens.

Step 1: We take beef for baby goulash without bones, veins and fat. We only need the flesh of a young calf. Rinse thoroughly, cut into small pieces.

Step 2: Peel the onion and cut it into thin half rings. Place in a well-heated frying pan with a small amount of oil.

Step 3: Simmer the onion slightly and add pieces of tender veal to it. First, brown the pulp a little, and then pour a glass of water into the frying pan and cover with a lid. Simmer over low heat until almost done. Add salt and pepper at the very end.

Step 4: Now we will need another half glass of water. We dilute the flour in it until the lumps dissolve. Then add tomato paste, fill the glass completely with water and stir.

Step 5: So, the meat is almost ready. Pour in the resulting sauce, stir until the sauce begins to thicken - you get gravy. Add the bay leaf, simmer for another ten minutes and remove from heat. We take out the bay leaf so that the finished dish does not become bitter. Serve goulash with any side dish.

Diet sauces

In general, dietary sauces come in a wide variety, and new recipes are constantly appearing. They can be made from vegetables, tomatoes, milk or sour cream, from a wide variety of ingredients. The main thing is that the principle of nutrition on the “fifth” diet is strictly observed.

On this diet, onions and garlic, any hot seasonings and spices that irritate the mucous membrane of the stomach and intestines, as well as spinach, radish, sorrel and any canned foods are prohibited. But tomatoes, salt and sugar in moderate proportions, low-fat dairy products and butter are allowed. This means you can prepare a variety of light gravies to suit every taste!

For example, a dietary sauce made from sour cream with the addition of dried herbs, a sauce made from milk with butter and flour, a sauce made from vegetable broth with eggs. There are many options, and even you, being on this diet, can create your own gravy recipes, guided by the restrictions and recommendations of this diet. The main thing in dietary sauces is no excess fat, do not fry anything, only simmer, and avoid harmful and prohibited foods. And, of course, moderation is the most important thing in any diet!

Sprinkle with any ground spices - a couple of pinches. Close the lid. Cook in sauté mode for another 25 minutes. If desired, sprinkle the finished dish with finely chopped fresh herbs. Serve the dish immediately or a little later. If the goulash has time to cool down, you can always use the “Reheat” mode in your multicooker.
