As they say, both yours and ours: it’s good for your stomach and your figure hasn’t been spoiled. The main thing is to initially plan your New Year's table, following simple recommendations.

“Beef under a fur coat” for the New Year 2021

Under a fur coat you can make not only herring, but also beef. To prepare such a festive dish you need to prepare:

§ beef tenderloin – 400 g;

§ small zucchini – 1 piece;

§ small eggplant – 1 pc.;

§ butter – 180-200 g;

§ salt and spices - to taste.

How to cook:

First you need to prepare the eggplant. It should be cut into pieces about 10 mm thick, rub each with salt and leave for 20 minutes. After this, rinse the vegetable pieces and place in a colander to drain excess water. This must be done so that the eggplant does not become bitter.

Cut the meat into portions, and cut the zucchini, as well as eggplants, into centimeter-thick slices. Melt the butter in the crust. Cover a baking sheet with foil and grease it with oil. Place the meat on foil, sprinkle with spices and add salt on top. For each piece of meat, put 1-2 slices of zucchini and also add salt, and place a slice or two eggplants on top. Pour melted butter over the prepared meat portions, wrap in foil and place in a preheated oven, where the temperature is already kept at 180°C. The meat needs to be baked for 30-40 minutes and can be taken out to the table immediately. Tasty and simple. And as a side dish for beef under a fur coat, you can serve rice or potatoes, preferably baked.

In order to adhere to proper nutrition as much as possible, let us recall several basic selection criteria for preparing food for the New Year or Christmas table.

Baking is healthier than frying

When frying food, a huge amount of fat accumulates, which is harmful not only to its appearance, but also to the body as a whole.

When baking, more nutrients are retained, and the product remains juicy and tasty. The main thing is not to use mayonnaise and sour cream in the marinade. Even low-calorie products, these products do not make the dish dietary.

You can use olive oil and spices for the marinade; this will not only give an amazingly subtle aroma, but also softness and tenderness to the taste.

The choice of side dish is important

When choosing a side dish, base it on how caloric the product is. Rice (brown or brown), baked broccoli, and cauliflower are rightfully recognized as the best.

As we know very well, alcohol, by its nature, not only contains calories, but also awakens the worst enemy of a good figure on a holiday - appetite. Therefore, if you decide that a party without alcohol is not a party, then you should choose alcoholic drinks with a minimum sugar content: if it is wine, then dry, in extreme cases, semi-dry; if it’s champagne, then it’s brut.

As for soft drinks, sweet carbonated water should be excluded in principle, and only natural and freshly squeezed juices should be used.

You can replace lemonade with sugar-free compote, fruit smoothie, water with lemon juice. Also choose tea, hibiscus, coffee and other drinks that can be served without sugar.

Meat salad “Spicy” for New Year 2021

Ingredients:

  • beef - 125 gr;
  • gherkins (pickled) - 0.1 kg;
  • parsley (greens) - 5-10 g;
  • cucumber (fresh) - 0.1 kg;
  • tomatoes - 200 g;
  • sour cream - 30 g;
  • salt, pepper - to taste;
  • granulated sugar - 2 g;
  • mustard - 1 tsp;
  • mayonnaise - 20 g.

How to cook:

  1. Boil and cool the meat.
  2. Cut the beef, fresh cucumber and gherkins into strips.
  3. Remove the core from the tomato, then cut into strips.
  4. Finely chop the greens.
  5. Mix sour cream, mayonnaise, mustard. Add salt and sugar.
  6. Place all the products in a beautiful salad bowl and season with sour cream and mayonnaise mixture. Sprinkle pepper on top and garnish with herbs.

Cold appetizers

Cold appetizers are a must on any holiday table.

Tartlets “Sea Delight”

With an extremely simple composition, you will get an unusually tasty result.

To prepare you will need:

  • ready-made tartlets - 10 pcs.;
  • crab sticks - 150 g;
  • shrimp - 150 g;
  • squid carcass - 2 pcs.;
  • red caviar - 100 g;
  • low-calorie mayonnaise or yogurt with mustard - 3 tbsp. l.;
  • parsley - to taste.

Cooking method:

  1. Boil shrimp in salted water until cooked.
  2. First clean the squid, then cook in salted water for 1-2 minutes.
  3. Clean the shrimp.
  4. Leave a few shrimp for decoration, finely chop the rest into cubes.
  5. Grind the squid into cubes.
  6. Chop crab sticks.
  7. Combine all ingredients, season with low-calorie mayonnaise.
  8. Carefully place the resulting salad into tartlets and garnish with shrimp, caviar and herbs.

If you want to make the dish completely dietary, you can replace the tartlets with lavash, in which you should wrap the filling. Instead of low-calorie mayonnaise, you can use low-fat sour cream or salted yogurt mixed with mustard.

Red fish rolls

Minimum ingredients - maximum taste sensations. You can fully experience the full degree of truthfulness of these words only by trying this dish.

So, for 10 servings you will need:

  • red fish - 750 g;
  • low-calorie cottage cheese - 600 g;
  • pickled cucumbers - 5 pcs.;
  • greens - to taste.

Stages of achieving the goal:

  1. Grind the cucumbers into cubes.
  2. Mix cottage cheese with finely chopped dill and then with previously chopped cucumbers.
  3. Lay the red fish cut into thin slices overlapping each other on cling film.
  4. Distribute the filling evenly over the seafood.
  5. Sprinkle everything nicely with parsley.
  6. Roll the resulting semi-finished product into a roll and wrap it in film.
  7. Place in the refrigerator for 1 hour.
  8. After an hour, remove the roll from the cooling device and cut it into slices.

Can be served on the New Year's table!

Pineapple rings with shrimp

A beautiful and tasty appetizer will become the pearl of the New Year's table.

You will need:

  • can of pineapple rings - 1 pc.;
  • low fat cheese - 150 g;
  • frozen shrimp - 400 g;
  • sour cream 10-15% fat - 300 g;
  • garlic - 2 cloves;
  • mustard - 1/3 tsp;
  • salt - to taste;
  • olives, olives or herbs for decoration.

How to cook:

  1. Drain the pineapples and blot each ring with a napkin.
  2. Boil shrimp in salted water, peel.
  3. Grate the cheese on a fine grater.
  4. Add sour cream and mustard, chopped garlic, and salt to the cheese.
  5. Coat the rings with the mixture.
  6. Cover with shrimp.
  7. Garnish with olives or herbs.

How to make turkey cutlets:

  1. Wash and dry turkey parts. Remove skin and fat.
  2. Wash and peel the vegetables. If using garlic, press it through a press.
  3. Cut the meat and vegetables into pieces and mince them twice or grind them in a food processor.
  4. Beat the egg into the minced meat, add salt and pepper, add finely chopped fresh herbs if desired and knead the minced meat. If the minced meat is too liquid, add bran or instant oat flakes without additives.
  5. With wet hands, form into patties.
  6. Grease the multicooker bowl with oil, place some of the cutlets and cook for 30 minutes on the “Baking” program with the lid closed. After 15 minutes, turn the cutlets over.

  1. There is no need to replace yoghurt dressings with mayonnaise. Even a small amount of a high-calorie product will turn the dish into the main enemy for the figure;
