Any dietary mushrooms can be combined with vegetables and cereals. In the first case, you get a low-calorie dish, just what you need when losing weight. For preparing dishes, it is better to use cabbage, broccoli, Brussels sprouts, a small amount of carrots, and zucchini.

Pilaf with mushrooms

200 g champignons, 2 onions, vegetable oil, 1 cup basmati rice, carrots, 2 cloves garlic (crushed), 1 teaspoon ginger root (use fresh), cumin, coriander, chopped fresh cilantro or dill, salt.

In a thick-walled pan (cauldron), fry onion, garlic, and chopped carrots in vegetable oil. Add chopped champignons, ginger, cumin, coriander (or any other spices to your taste), salt and sprinkle rice on top. Pour in 450 ml of hot water. After boiling, cover with a lid and cook over low heat until the rice is cooked. The finished pilaf should stand for 10-15 minutes under a closed lid. After this, you can add chopped herbs and mix carefully.

Cabbage stewed with champignons

Chop carrots, onions and champignons and simmer. Stew the shredded cabbage separately until half cooked with the addition of vegetable oil. Combine all the vegetables in a saucepan, add salt, allspice, bay leaf, tomato paste (or tomato juice) and simmer until fully cooked.

Oyster mushroom or champignon sauce

Oyster mushrooms 300 g, onion, salt, pepper, sour cream.

Boil oyster mushrooms (or any other) and chop finely. Lightly fry the onion with flour. Combine everything, dilute with mushroom broth, salt and pepper, add ground bay leaf, pepper and sour cream. Let it simmer.

Pate with mushrooms, cheese and cottage cheese

Boil and chop porcini mushrooms and champignons. Mix cottage cheese and grated cheese with mushroom broth, beat the resulting mass and add prepared mushrooms and dried mushroom flour. Add salt to taste. If desired, you can add garlic and herbs.

Barley mushroom soup

Delicious and healthy dietary soup. Barley will add satiety, and mushrooms will add piquancy. This soup can be seasoned with cream or served with sour cream, but this is for those who do not count calories.

To prepare mushroom soup with barley you will need:

  • Pearl barley – 200-250 g.
  • Dried white mushrooms – 25-30 g.
  • Fragrant roots - parsley, parsnip, celery - 100 g each.
  • Meat broth – 2.5 l.
  • Freshly ground pepper, preferably white, can be replaced with a ground mixture of peppers - 1.5-2 g.
  • Table salt – 5 g.

Let's start preparing pearl barley mushroom soup:

  • Pearl barley must be thoroughly rinsed until the water is clear, then pour cold boiled water over it for an hour.
  • Soak dried white mushrooms in hot water for an hour, then rinse and pour boiling water for another hour.
  • Boil the meat broth and put the soaked pearl barley into it, reduce the heat, and cook for about an hour with the lid closed.
  • At the end of cooking, add salt to the pearl barley.
  • Peel and finely chop the aromatic roots of parsnips, parsley and celery.

  • Remove mushrooms from water and cut.
  • Add mushrooms and aromatic roots to the prepared pearl barley, cook for 10-20 minutes, pepper.

Lenten mushroom soup


The recipe for this mushroom stew includes the following products:

  • porcini mushrooms - 300 grams or the same amount of champignons;
  • 1 small onion;
  • 3 cloves of garlic, leeks;
  • barley chaff;
  • vegetable oil - 1 tbsp. l.;
  • basil;
  • peppercorns;
  • salt.

The cooking sequence is as follows:

  1. Rinse the mushrooms with water, cut into strips, fry them in a frying pan with the addition of vegetable oil - sunflower or olive.
  2. Add the onion, then add distilled water to this mixture and cook over low heat until it boils. When the mushrooms are ready, you can pour barley into the water and add salt and pepper and continue cooking the soup for about 15 minutes, then add basil and paprika to the broth.

  • 2 tablespoons flour;
  • 40 gr. butter for frying flour and another 20 gr. for frying mushrooms and onions;
  • 2 cups low-fat chicken broth;
  • 1 cup cream;
  • spices and salt to taste.

It is more convenient to cook in a saucepan with a thick bottom. Place butter in a saucepan and melt. Then add flour, mix and fry for a couple of minutes. Then gradually pour in the warm, but not hot, broth, stirring vigorously so that no lumps form. Bring to a boil.

In a separate frying pan, fry finely chopped onion in butter. You shouldn't fry it until it changes color, it just needs to become soft. Then add the champignons cut into slices or slices. Continue frying for 5-7 minutes. A couple of mushrooms can be left for decoration; they are cut into slices and fried separately.

Place the onions and mushrooms in the broth seasoned with flour. Cook everything together for about 10 minutes. Then remove from heat, cool slightly and grind in a blender until pureed. Pour into the pan again, add cream and heat without letting it boil.

Rinse the parsley and thyme and chop it as finely as possible.
  2. At the bottom of the saucepan in which the diet puree soup will be prepared, melt the butter and olive oil. First fry the onions and garlic on it.   3. Pour one liter of water into a saucepan, stir the ingredients and simmer over low heat for about 20 minutes. The finished zucchini puree soup with mushrooms should be cooled slightly, pureed in a blender, mixed with cream and pieces of processed cheese.
