Very tasty and very light chicken meatball soup. It is perfect for lunch for those who care about their health and figure. It's simple and quick to prepare, but it turns out tasty and nutritious.
PP chicken soup
For this simple recipe you will need the following ingredients:
- 300 grams of chicken drumstick. Since this is a dietary recipe, the skin will need to be removed from the meat. Fill the chicken with water and let it cook. As soon as the water starts to boil, remove the foam and drain the water. Then fill the chicken with water and put it on the stove to cook again.
- 1 medium onion. Cleaning.
- 1 medium carrot. Wash, peel and cut into cubes.
- 200 grams of cauliflower. Wash and separate into small inflorescences.
- any greens. Wash and chop thoroughly.
- Salt and spices.
- Bay leaf.
Fill the chicken with water and let it cook. As soon as the water starts to boil, remove the foam and drain the water. Then fill the chicken with water, add a whole onion to it and put it on the stove to cook again. Cook until the chicken is completely cooked. When the meat is soft, you can take it out, take it into pieces and put it back into the pan. Add carrot cubes to the meat and cook for about 16 minutes, then add cauliflower to the same place. Salt and pepper the soup, add your favorite spices and bay leaf. At the very end we add greens. PP chicken soup is ready!
How to make cheese soup with chicken meatballs
Cheese soup is always very tasty, and when combined with meatballs, it’s simply to die for. Thick, rich and very satisfying. This kind of food came to us from French cuisine; it is distinguished by its delicate creamy consistency.
Ingredients:
- Minced chicken – 500 gr
- Onion - 2 bulbs
- Egg - 1 pc.
- Spices to taste
- Potatoes - 7 medium
- Carrot - 1/2 medium
- Bay leaf.
- Tomato - 1 large
- Processed cheese 1/3 large package
- Ground black pepper 1 tsp
- Sweet paprika - 1 tbsp
- Salt to taste
- Fresh herbs - a small bunch of dill
- Vegetable oil - 60 g
Method of preparation: Finely chop one onion, add it to the minced meat, add some spices, and break an egg. Mix into a homogeneous mass and form meatballs.
Peel the potatoes and cut them into cubes. Bring a pan of water to a boil over heat and let the potatoes and meat balls cook. Chop the second onion and grate three carrots. Blanch the tomato and remove the peel.
Heat a frying pan with vegetable oil, fry the onion until browned, then add carrots and finely chopped tomato. Fry until cooked, then add spices, bay leaf, salt, and chopped herbs. Cook for a couple more minutes.
Add the prepared vegetable mixture to the pan and stir. Add creamy melted cheese to the broth.
Do not add cheese in large quantities at once, as it will not spread well. Stir the broth more until the cheese is completely dissolved in it.
Taste the broth and add salt if necessary. In a couple of minutes the soup will be ready.
Let it sit for a while so that the ingredients are well saturated with the creamy taste.
Chicken soup - dietary chicken breast recipe
If you love chicken fillet, then you will definitely like this simple version of pp soup for weight loss. You need to prepare the following ingredients:
- 2 chicken fillets. We rinse them thoroughly and fill them with cold water. Let's cook. As soon as the water boils, immediately reduce the heat. Chicken breast should be cooked over low heat so that it is not hard.
- 1 medium carrot. Wash, peel and cut into strips.
- 1 medium onion. Clean and finely chop.
- 300 grams of green beans. This will add more fiber to our diet. You can use either fresh green beans or green beans.
- Salt and spices to taste.
Once the chicken breast has come to a boil and you have reduced the heat, you can time its cooking time. 20 minutes is enough for the meat to cook. 10 minutes before the end of cooking, add onions, carrots and green beans to the dietary chicken soup. - 300 grams of minced chicken. It is best to prepare minced meat yourself from chicken fillet.
- 1 medium onion. Clean and grate. We will add onions to the minced meat.
- 1 large carrot. Clean and cut into cubes.
- 300 grams of broccoli. You can use fresh broccoli or frozen.
- salt and spices to taste.
Pour water into a saucepan and put it on fire. Immediately add the required spices. While the water is boiling, make the meatballs. Add onion, salt and other spices to the minced meat. Mix everything thoroughly and form small meatballs. Once the water is boiling, you can add the meatballs to the soup. Cook for about 10 minutes, then boldly add carrots and broccoli. Cook for another 10 minutes until the vegetables are soft. At the end you can add greens.
Soup with chicken meatballs and vermicelli
The recipe is no less tasty than the previous ones, and also satisfying, because the ingredients include vermicelli.
Ingredients:
- Minced meat 300 gr
- Potatoes 250-300 gr
- Vermicelli 70 gr
- Onion 1 head
- Carrot 1 medium
- Bell pepper 1 piece
- Sunflower oil 1 tbsp
- Salt

Method of preparation: To avoid wasting time, immediately place a pan of water on low heat. Cut the potatoes into cubes. Add some salt to the water in the pan and put the potatoes in it.
Finely chop the onion, cut the pepper into strips, and grate the carrots on a coarse grater. Heat a frying pan with vegetable oil and fry the chopped vegetables until tender.
While the vegetables are cooking, let's make the meatballs. Add a little salt and seasoning to the minced meat.
I didn’t make a list of seasonings, because I know that every housewife has her own favorite spices for meat. Use the ones you like.
Stir the minced meat so that the seasonings are evenly distributed, then form the meatballs.
To make it easier to make minced meat balls, wet your hands with water.
When the potatoes are almost ready, add the frying mixture to the pan, followed by the meatballs. Please note that, unlike the first recipe, we do not pre-fry them. Increase the heat, stir the ingredients and bring them to a boil, then cook for another 5 minutes. Add thin vermicelli, cook for 2 minutes.
At this stage, taste the soup and add salt if necessary. Finely chop the greens and add them to the broth, cook for half a minute.
The dish is ready and can be served.
PP chicken soup with noodles or vermicelli
Do you like noodle soup? Diet is not a reason to deny yourself such pleasure! For this delicious recipe you will need the following ingredients:
- 1 chicken fillet. Wash and cut into thin pieces.
- 1 medium carrot. Clean, wash and cut into strips.
- 70 grams of vermicelli. We use only durum wheat vermicelli.
- 1 egg. It must first be boiled and cut into cubes.

Place chicken fillet in boiling water (about 1 liter). Salt and pepper. Then we send carrots there too. Cook for about 20 minutes, then add vermicelli and cook for about 7 minutes. At the very end, add the egg and, if necessary, add even more spices and herbs. PP chicken soup is ready!
Chicken Meatball Noodle Soup Recipe
“How is this recipe different from the one with noodles?” — you probably have a question. The differences may not be great, but we will prepare this soup with homemade noodles. Yes, this is, of course, not such a quick recipe, but the dish is worth it.
Ingredients:
- Potatoes - 3 pcs (large)
- Carrots - 1 pc.
- Onion - 1 pc.
- Chicken fillet – 300g
- Provencal herbs
- Egg - 1 pc.
- Allspice peas
- Bay leaf
- Salt, pepper to taste
For the noodles:
- Flour
- Egg - 1 pc.
- Salt
Method of preparation: First of all, let's prepare the noodles. I didn’t write the exact amount of flour, because different brands behave differently. Focus on the consistency of the dough; it should be hard and elastic.
Add a pinch of salt to the broken egg, beat a little and start adding flour. Pour and knead until you achieve the desired density. Leave to lie under the film for 20 minutes.
After the time has passed, dust the table with flour and roll out the dough into a thin flat cake and cut it into thin strips.
Let's prepare the minced meat for the meatballs. Break 1 egg, add spices (salt, pepper and herbes de Provence).
Mix everything well. Form small meat balls. Cut the potatoes into small cubes. Divide the onion into two parts, chop 1 half, leave the other whole. Three carrots on a fine grater.
Place the pan on the fire and throw half an onion, a little grated carrot, allspice, and bay leaf into the water.
After the broth boils, remove the onion and add the potatoes.
Fry onions and carrots in a frying pan.
Once the potatoes are boiling, add the chicken meatballs. Bring the soup to a boil and add homemade noodles.
Five minutes before readiness, add the roast and herbs. Soup with homemade noodles and chicken meatballs can be served.
Low calorie chicken soup
For those who want to do a real detox, this option is perfect:
- 1 chicken breast. Wash and cut into cubes.
- 200 grams of celery. We use stems. Wash and cut.
- 1 medium carrot. You can grate it.
- 1 small onion. You don’t have to cut it, but add it whole. This will give you a flavorful vegetable broth.
