Cooking technology: to prepare beef meatballs with rice or “hedgehogs”, you need to prepare the meat and grind it in a meat grinder. Round rice is boiled in water until the porridge is crumbly. Finely chop the onion and sauté in oil until golden brown. Weight of ready-made fluffy rice 30 g; mass of sautéed onions 12 g; semi-finished product weight 135 g.
Add salt and spices to the minced meat, combine it with sautéed onions and crumbly rice, mix everything well. Meatballs are formed from the mass into balls, 2-3 pieces per serving. The preparations are breaded in flour, fried, transferred to a deep bowl, poured with sauce and simmered.

How to cook classic meatballs with rice and minced meat
We begin to prepare classic meatballs with rice at home, such meatballs were often prepared by our mothers and grandmothers, and served on the table along with the most delicate mashed potatoes.
Step 1.
Rice should be rinsed thoroughly in cool water. Rinse until the water becomes very clear. Now you need to mix the minced meat with thoroughly washed rice, add a little salt and pepper.
Step 2.
We cut the onion as desired. Some people prefer small ones, others prefer them cut into half rings or rings. It all depends on your taste and aesthetic preferences. We also chop the carrots (on a grater or using a knife). Now you need to fry the onions and carrots in a frying pan.
Step 3.
Let's form our rice meatballs. We make balls with a diameter of 3-4 cm and immediately place them on the prepared “pillow” of onions and carrots.
Step 4.
The meatballs are almost ready. All you need to do is pour boiled water over the minced meat balls in a frying pan, cover them with a lid and leave to simmer over low heat for 50-55 minutes (depending on the diameter of the meatballs).
Step 5.
