Recipe for minced beef cutlets: tasty and low-calorie

General rules

Steamed food is considered dietary, so a steamed diet is most often prescribed for diseases of the gastrointestinal tract. Low fat content and the absence of transgenic fats in dishes is important for high cholesterol and cardiovascular diseases.
For people over 40 years of age, this method of cooking is a measure to prevent heart and vascular diseases. It is interesting that the steam diet is also used for weight loss, as well as maintaining weight at the same level. With a healthy and nutritious diet combined with moderate physical activity, you can easily maintain a slim figure. Cooking in a double boiler allows you to reduce the calorie content of dishes, since no fat is used. A steamed and fried cutlet differs in calorie content by 150-200 kcal. This way, you can strictly monitor and reduce calories while maintaining the value of the product. This is the main factor that allows you to lose weight. It is also worth considering other advantages of steaming:

  • Preservation of nutrients, minerals and vitamins in products. In a steamer, food does not come into contact with water, which minimizes the loss of valuable nutrients.
  • There is no need to use oils or fats, so they are not heat treated. The fat present in the product is lost and goes into a container of water. These two points add additional benefits to the finished dish.
  • Maintains moisture, color and texture of the product. Steam passes through food evenly, preserving its texture and taste. At the same time, dietary fiber is softened, the product becomes tender, easily digestible and does not carry additional burden for digestion.
  • You can cook many products: vegetables, fruits, meat, fish, cereals in perforated bags and pasta.
  • Ease and simplicity of preparation: no need to stir, turn over or constantly monitor, as the steam envelops the product and penetrates everywhere.
  • At different levels of the steamer you can cook different dishes at the same time, which is important for saving time.
  • There are no excessive prohibitions or restrictions in this diet. All food should be steamed using various types of steamers. The convenience of an electric steamer is that it has the ability to maintain a constant temperature; they are equipped with a timer, so you can set the cooking time for food.
  • You can eat poultry, fish, meat, low-fat cheeses, cottage cheese, vegetables, vegetable soups (prepared in the usual way), cereals, dairy products, non-sweetened fruits, and sometimes include baked goods made from low-fat dough. If the diet is balanced, then you can stick to it for a long time and even permanently. For many, this becomes a eating style.

Losing weight will be effective if you ensure a calorie deficit - less calories taken in from food than consumed during the day. On the one hand, you need to reduce the calorie intake (due to fats and simple carbohydrates), on the other hand, increase physical activity. Only if this condition is met will fat reserves be burned. You can create a menu at your own discretion, but the daily caloric content of the diet should not be more than 1500 kcal. You can also use other cooking methods (boiling, baking) if some foods cannot be steamed (for example, eggs, legumes, pasta - you can, but they will take a long time to cook and may stick together).

For greater effectiveness, you should follow the general rules of nutrition when losing weight:

  • Frequent meals (5-6 times). Portions for breakfast and lunch can be 250-300 g, and for dinner and during snacks during the day - 150-200 g.
  • Compliance with the principles of separate nutrition: porridge, bread, pasta or potato dishes should be a separate meal, fish and meat should be consumed with low-carbohydrate vegetables (cucumbers, lettuce, white cabbage, seaweed). The intervals between carbohydrate foods and protein foods are at least 4 hours.
  • Maintain a drinking regime - up to 2 liters of fluid per day.
  • Dinner no later than 3 hours before going to bed.
  • Limit salt and sweets.

Choosing the best ways to prepare ground beef patties

Every housewife should know how to prepare minced meat for dietary beef cutlets. To prepare the chopped base, the crumb is cut into slices (1 cm each), then along the fibers and across.

Before grinding in a meat grinder, fat, veins, and films are cut off from the fillet. You cannot leave them, as they will clog the grate, squeezing the juice out of the meat, and then the minced meat will become too wet.

Cutlets

It is better to chop the onions separately, as they change the viscosity of the meat mass. Therefore, you should not twist the vegetable through a meat grinder along with beef. Pieces of meat are passed through a meat grinder 2-3 times and then blended with a blender.

To make steamed or baked beef cutlets more airy, you need to beat the minced meat. To do this, the mass is sharply collected, thrown onto the surface or into a bowl until it becomes elastic and stops sticking to your hands.

Salt destroys muscle proteins and absorbs moisture, so it is added at the very end. If you do this earlier, the beef cutlets will be dry and crumbly.

To ensure sustainable weight loss, choose the appropriate heat treatment method. It is better to steam, bake or stew dietary cutlets. Frying increases the calorie content of a dish.

This is interesting! Fried cutlets contain approximately 380 kcal, stewed cutlets - 230 kcal, steamed - 190 kcal.

For a couple

Steamed cutlets turn out juicy, tender and fluffy. For this purpose, use a double boiler or pressure cooker. If you don’t have this equipment at home, you can prepare a dietary dish using a pan of boiling water and a colander. After such heat treatment, the nutritional value of steamed beef cutlets decreases; they are easier to digest and do not overload the gastrointestinal tract.

The minced meat is prepared in the manner described earlier, then the cutlets are formed with wet hands, water is poured into the steamer, the container is greased with olive oil and they are laid out. The balls should not be distributed very tightly so that they do not stick together. Steam meatballs are prepared in the “Steam” mode for 30-50 minutes.

Cutlets

The steam cooking method is suitable for those losing weight, supporters of PP, children, and people with diseases of the digestive tract.

In the oven

Baked diet beef cutlets take longer to cook than fried ones, but they retain more benefits and do not need to be constantly at the stove. Simply form balls, roll them in breading and place them on a baking sheet lined with parchment paper. It is not recommended to use vegetable oil or other fat.

The foil in which the balls are wrapped will help preserve juiciness. And 10-15 minutes before the end of cooking, open them to brown.

This is interesting! If you add 2-3 tbsp to the beef base. spoons of water or low-fat milk, then the diet cutlets will be juicy.

Yolks make the dish airy and soft; if you are on a diet, it is recommended to use 1-2 pieces. per 1 kg of meat. To obtain a tender consistency, ground beef is placed in the refrigerator for 10-15 minutes before heat treatment.

Cutlets

The optimal temperature for cooking dietary beef cutlets in the oven is from 180 to 200 degrees. Cooking time is from 30 to 50 minutes, but no more than an hour. To increase the juiciness of the dish, add ½ cup of boiling water to the pan 15 minutes before the end of cooking.

In a slow cooker

Steamed dietary beef cutlets in a slow cooker are prepared in much the same way as in a double boiler. The bottom of the steaming container is greased with olive oil, the balls are laid out so that there is a distance between them and they do not stick together. Then water is poured into the pan, and a container with cutlets is placed on top. The dish is prepared for half an hour in the “Steam” mode.

There is another option for preparing dietary steam meatballs:

  1. Fry the cutlets on both sides using the same setting, greasing the bottom with olive oil in advance.
  2. Add water to the multicooker (up to the middle of the cutlets), close the lid, and cook on the “Stew” program for 20 minutes.

You can also cook a beef dish using the “Baking” program (20 minutes on each side).

In a frying pan

It is forbidden to fry dietary beef cutlets in oil. After such processing, the calorie content of the dish increases, it is saturated with carcinogens. With regular consumption of such food, weight increases, cholesterol concentration increases, and the risk of cancer increases.

Cutlets

As a last resort, you can fry dietary minced beef cutlets in a non-stick frying pan. They can also be stewed in a mixture of olive oil and water (1:2).

INTERESTING : Sometimes a situation may arise when you urgently need to steam cutlets, but you don’t have a steamer or a multicooker at hand. How to cook steamed cutlets without a steamer? In this case, a regular metal sieve or colander will help out.

Pour a small amount of water into a saucepan of suitable size and place on fire. A sieve or colander is placed on top of the pan and the prepared cutlets are placed in it. The structure must be covered with a lid. Such a water bath will help prepare the product no worse than conventional units.
However, this dish can be prepared not only by steaming, but also in the microwave and oven.

Dietary steamed beef cutlets

Many people, for objective reasons, are forced to follow a dietary diet, but not everyone is ready to exclude meat dishes from their diet.

This is precisely what explains the growing popularity of recipes for low-calorie steamed dishes observed in recent years, eliminating the use of oil and fat.

The most acceptable option in this situation is to use beef meat, which experts “by default” classify as dietary products, since it contains a minimum of fat and is rich in protein. Let's look at a few recipes on how to prepare dietary beef cutlets:

In this case, the list of ingredients looks modest and will require half a kilo of ground beef, two chicken eggs and the same number of onions for cooking. The highlight of the program will be 100 grams of hard cheese. We must not forget about 20 grams of melted butter, as well as adding salt, seasonings and herbs to taste.

Meat and peeled onions are ground in a meat grinder or blender, and chopped chicken eggs are added to the resulting minced meat. The resulting mass is “flavored” with salt, spices and melted butter are added to taste. To complete the whole scheme, the cheese that is used to stuff the meat cutlet is finely ground.

Steamed dietary beef cutlets are prepared in a slow cooker in 45 minutes. To do this, the “steaming” mode is set on the device panel.

Cooking in the oven

In this version, dietary beef cutlets are baked well in the oven, the minced meat remains juicy, but is not greasy. The ingredients are:

  • beef (500-700 gr.),
  • onions (1-2 pcs.),
  • chicken egg (1 pc.),
  • seasonings - salt, pepper, fresh herbs.

The meat is pre-washed, cut into pieces and ground into minced meat. Then finely grated onion is added, which can alternatively be chopped in a meat grinder along with the beef, as well as an egg, salt and pepper. The resulting mass should be well mixed.

The baking sheet is covered with foil, which will prevent burning, and the formed cutlets are laid out on it. All this is covered on top with another sheet of foil and fastened around the perimeter. The cutlets are baked for 40 minutes in the oven preheated to 170-180 degrees.

Using a multicooker

Dietary beef cutlets in a slow cooker are not particularly different from the option of using the oven chamber. The components of the dish in both cases are half a kilo of minced beef and one onion. It is also necessary to add salt and spices to taste.

Minced beef is mixed with finely chopped onion, after which this mass is seasoned with salt and spices, mixed thoroughly, placed in a plastic bag and “beat” on the edge of the table. The cutlets are molded in the form of oval flat cakes.

Water is poured into the pan to the bottom measurement, and a steam container is placed on top. The cutlets are cooked in it for half an hour and can be recommended for consumption by people with allergies, including children.

Beef and chicken cutlets

Diet cutlets made from minced beef have a rich meaty taste, but often they turn out to be quite dense and tough. This can be avoided by adding chicken meat to the minced meat, which gives the dish a unique flavor and properties.

The crumb of bread made from white wheat flour is also added to the cutlet mass at the rate of 1 to 4 (250 grams per 1 kg of minced meat). Before use, the bread must be dried and then soaked. Otherwise, the minced meat will turn out quite viscous.

Adding water, milk, mayonnaise or sour cream to the meat mass will add juiciness to the product. You should not ignore the egg yolk, which is a binding component for the cutlets, making them denser and preventing them from falling apart. The shape of the cutlets is also preserved by thoroughly stirring and beating the minced meat.

Dietary beef and chicken cutlets are unpretentious to make and can be fried in a frying pan, baked in the oven, steamed or in a slow cooker.
