  • 2 tablespoons sesame seeds;
  • 2 teaspoons salt;
  • ¼ teaspoon of soda;
  • 9 tablespoons of sourdough.

Please note that flour, whey, butter, as well as the dishes in which you will mix the dough must be warm. To warm up the flour, sift it into a suitable dry container and place in a warm (up to 60 degrees) oven.

  • 300 g brine;
  • 120 g peeled rye flour;
  • 350 g wheat flour;
  • 1 teaspoon of soda;
  • 10 g salt;
  • 15 g sugar;
  • 2 teaspoons vegetable oil;
  • 2 teaspoons sesame or cumin.

Heat the brine a little, salt it and add rye flour. Stir and leave the mixture to rise for 20-25 minutes.

  1. Add sugar and begin kneading the dough, gradually adding wheat flour. The mass should be soft, slightly sticking to your hands. Cover it and leave it in a warm place.

  • 100 g pumpkin;

You can congratulate me, because today I am publishing my first recipe for you. Today I decided to tell you how to bake kefir bread without yeast in the oven. This recipe is very simple, so I decided to start with it.

I got this one from my grandmother. At first she did not have an oven, and she baked bread with kefir in the oven. I always watched with great interest and pleasure how she kneaded the dough, how deftly she formed the rolls, and then sent them to the oven. I remember how difficult it was to wait for homemade bread, because the aromas around were dizzying.

Then my grandmother took out the baked goods and for some time did not allow me to try them because they were hot. And I waited... When the bread cooled down a little, but was still warm enough, grandma tore off a piece and served it to me. Then I was glad that I had waited for fresh bread. It was delicious! Despite the fact that there was always a store-bought brick made from white wheat flour on the table, I always looked forward to homemade browned kefir bread, which I now associate with my childhood.

Oh, so much time has passed since then. I already have a family and a nice son, but I remember my grandmother’s baked goods with warmth and tenderness. I often use her recipe and bake homemade bread, despite the fact that modern stores always have a huge selection of baked goods.

You can't buy bread like this! But you can bake it in your kitchen.

Step-by-step preparation

  1. First, mix all the dry ingredients. Pour 170 g of oat bran into a deep bowl, which is about 12 full tablespoons. Add 35 g of wheat bran, which is about a full 6 tablespoons. Pour in 50 g of rye bran, which is also about 6 full tablespoons. If desired, you can omit wheat bran and replace it with rye bran.

  2. We also add 100 g of milk powder and one tablespoon of flax seeds. Mix dry ingredients. In addition to flax seeds, you can add sesame seeds, nuts, raisins and other toppings at your discretion.

  3. Pour 140 g of kefir into a glass, add one teaspoon of soda to it, mix. This way we extinguish soda in an acidic environment. We make sure to use fresh kefir of any fat content.

  4. In a deep bowl in which we will knead the dough, beat three eggs, add 0.5 teaspoon of salt, mix with a whisk until smooth.

  5. Add kefir, in which the soda has been quenched, and 65 ml of water to the eggs, mix. Add one tablespoon of olive oil or odorless sunflower oil and mix. Add the previously mixed dry ingredients. Knead the dough with a spoon or spatula. It should turn out homogeneous and soft.

  6. Line a baking dish with baking paper, spoon the dough into it, and give it the desired shape. Cover with a towel and leave for 30-40 minutes for the bran to swell. After this time, put it in the oven and bake for 30-35 minutes at 200 degrees. Check the bread for doneness with a wooden skewer. We pierce it in the middle: if the stick remains dry, it means the bread is ready. Turn off the oven, open it and leave the bread in it for another 10 minutes. Next, take the bread out of the pan, remove it from the baking paper, and leave it to cool on a wire rack or board, covered with a towel. After this you can serve.

The bread turns out very tasty and healthy. It is recommended to serve it cold or warm. Keeps in the refrigerator for a very long time. Can be cut into portions and heated in a toaster. You can make sandwiches from it, for example, spread it with a thin layer of butter and red caviar. Or you can spread it with cream cheese, put pitted herring fillet and fresh or pickled cucumber on top. It’s convenient to make sandwiches with cheese and sausage for your morning coffee, or to take with you to work as a snack.
