These breads were created thanks to titanic experiments with different types of flour and cooking techniques. Preparation

We prepare all the necessary ingredients. I used two types of sesame, light and dark.

We put all the seeds that are included in the grinder into the grinder: sunflower, pumpkin, flax and sesame seeds.

The size of the grains that we get when grinding is directly related to the thickness of the future bread. The smaller the grains of seeds, the thinner the dough can be rolled out and, accordingly, the thinner the bread will be. I tried it in different ways and settled on the size as seen in the photo: the particles are about half the size of a sunflower seed, so that the fractions can be felt and have an interesting texture.

Mix flour, crushed seeds and salt in a large bowl.

Dissolve honey in warm water (40-60°C), add to a bowl and mix, add sunflower oil and knead into a homogeneous dough. I mix with a spoon first and then work the dough with my hands. If you immediately mix with your hands, the dough sticks to your palms and fingers, which is not very convenient or pleasant. Roll into a ball and put the dough in a bag and leave to rest for half an hour. During this time, the additive seeds will absorb some of the moisture from the dough and it will become denser and easier to work with.

Next, we form the bread itself. This step is completely creative, there are no restrictions, whatever shape you want for the loaves, do just that. I like even, identical ones, so I do it this way. Divide the dough into two parts and roll out one part on a silicone mat as thin as possible. You can work on baking paper, but it’s more convenient on a mat, trust me. Trim the edges to create a large rectangle over the entire surface of the rug. Then, using the back blunt side of a knife or a metal ruler, divide the dough into loaves of the required size. I make the size approximately 4x12 cm. Place in the oven preheated to 180°C for 17-18 minutes. If your seeds are ground almost into flour and you manage to roll out the dough very thin, then the baking time is reduced to 12-15 minutes. After baking the first part of the dough, do the same with the second.

Rye bread is ready! You can eat them plain or top them with cream cheese, butter or a slice of cheese. The thing is very tasty! You can make a lot at once, put it in a large container and gradually eat it up, fortunately they have a very long shelf life, they will definitely last for several months. Bon appetit!

  • 600 ml warm water;

Oatmeal ground in a blender is mixed with other ingredients to form a thick dough. After which the finished mass is evenly spread on spread parchment and placed on a sheet in the oven. Bake at a temperature of no more than 190 degrees for 10 minutes. Then you need to remove the baking sheet from the oven and randomly cut the semi-finished cake into pieces. Finally, I figured out the best way to make them and I can’t help but share my find. I have already tried different versions of this recipe and am delighted with both the technology and the consistently excellent results! The recipe, of course, is not a revolution in “bread making”, but I’m sure you will find a few ideas useful.

  1. This recipe is good because it produces both healthy juice and the basis for healthy bread - my favorite waste-free production.
  2. Minimum ingredients. For raw food breads, quite a few components are often used. And - which is not at all good - there are a lot of different nuts and seeds. I also have such complex recipes on my blog. It turns out, of course, tasty, but it’s a little difficult to digest. And a little expensive... In this recipe I use only ground flax seeds.
  3. No garlic. Many breads use a variety of spices for flavor, including garlic. It's not needed here at all! Moreover, onions can be replaced with green ones - in any case, the taste is similar to chips with onions and sour cream.
  4. The breads themselves can be used as an independent snack, as a base for pizza, and even as a base for meatballs!

In general, I hope I have completely convinced you to try the recipe yourself.

Ingredients:

  • vegetables - about 500g (great from carrots with Jerusalem artichoke, from one carrot, or from carrots with pumpkin)
  • flax seeds – 200g
  • dry herbs – 2-3 tbsp.
  • pickled onions – 4-5 tbsp. (or a bunch of green)
  • salt, seasonings - optional and to taste
  • clean, cold water - 1 tbsp.

I’m used to doing it “by eye”, but from the photo it will be clear exactly how many products are needed.

Cooking method:

1. Prepare ingredients. If you have it, use pickled onions – I’ve been convinced more than once that this is one of the healthiest raw materials! The fact is that if the onion is pickled in advance, it completely stops being bitter and only the aroma remains.

If you don’t have such a preparation, cut a medium onion into small cubes and pour in the juice of half a lemon for at least 30 minutes.

Personally, I like it better with onions, but, as I already said, you can also use green onions - just don’t forget to add lemon juice to the dough.

As for seasonings, I first added cumin, but then I made it without any spices at all - only with salt. From dry herbs, you can add whatever you have and what you love - dill, basil, parsley, cilantro... If you have dry tops or wild plants - this is generally great - I add carrot tops and a little nettle.

2. Squeeze juice from vegetables. Drink the juice with pleasure, and transfer the juice to a deep bowl.

And here is a delicate moment. I have a regular centrifugal juicer and the pulp remains quite moist. If you are the happy owner of a good auger juicer and the juice cake remains almost dry, add a little juice to the cake.

3. Add a glass of water, a little salt, dry herbs to the bowl with the cake and mix everything using an immersion blender so that there are no fibers or large pieces in the finished bread:

If your juicer works better than mine and there are no large vegetable fragments left in the juice, skip this step.

4. Add pickled onions (along with juice) and flax seed ground in a coffee grinder to a bowl:

5. Mix the dough thoroughly - by the way, it’s an excellent linen mask for hands - and leave to steep for 15 minutes - just while you’re cleaning the kitchen.

6. Apply the dough to dehydrator sheets and dry at 40C until completely dry.

The degree of readiness is determined by the fact that the bread easily separates from the sheets.

Decor:

You can dry the usual square bread, or you can make a round pizza crust. The dough is very flexible and not sticky, so it is easy to spread.

If you cut the round pizza base into pieces before drying, then the finished pizza can be easily divided into even slices. In addition, you will have slices in stock - in case you want a piece of pizza, but are too lazy to make a whole one.

And one more interesting point... At the drying stage - after 4 - 6 hours, you can use a spatula to remove several almost completely dried breads and give them the shape of meatballs:

It’s like in the recipe for the Count’s Ruins cake – initially the dough is not thick enough, but once it’s dried you can already shape it.

That is, you can get another tasty dish even if the bread is not ready - very convenient. Especially if you are hungry. In addition, dried flaxseed is much tastier. And with vegetables it’s simply delicious!

Dietary bread with bran

A more complex diet bread recipe includes:

  • 150 grams of oat bran;
  • 60 grams of wheat bran;
  • 250 ml low-fat milk;
  • 2 eggs;
  • 1-3 cloves of garlic;
  • Greens, salt, pepper to taste.

To prepare such dietary bread at home, you need to pour milk over the bran and let it swell for 20 minutes. Then you can add crushed garlic or finely chopped parsley, basil or dill (to taste) to the mixture.

After 20 minutes, eggs are driven into the dough, and the whole mass is thoroughly mixed. After a short rest, the dough is placed on a baking sheet covered with parchment and baked for 20-30 minutes. After which the finished dish is cut into pieces.

Diet crispbread with flax seeds

There are also recipes with various additives. In particular, you can use flax seeds, which are also rich in nutrients.

To prepare, grind 2 tablespoons of flax seeds in a blender. Then add half a glass of buckwheat and whole grain rye flour and 2 tablespoons of wheat flour.

Add 1 teaspoon of dry yeast, sugar and salt to taste to the dry mixture. Now you can add water, exactly as much as the mixture takes, but no more than 2 glasses.

After the dough is kneaded until it becomes thick sour cream, it must be allowed to rise and you can start baking.

Delicious diet bread

They include:

  • A mixture of sesame seeds, flax seeds, pumpkin seeds. You can add crushed nuts - 20g;
  • Coconut flakes – 10g;
  • Oatmeal – 80 g;
  • Water – 100 ml;
  • Salt to taste.

The crushed seeds are mixed with flour, after which water is added. The sticky dough must be rolled out onto a baking sheet and the cake baked in the oven at 180 degrees for about 20 minutes. It is advisable to cut the finished product into portions.

As it turns out, making diet bread is a fairly easy task, the result of which will be delicious diet sandwiches with bread.

Gluten free buns

A few months ago, I eliminated all foods containing white flour and sugar from my diet. And it turned out that the hardest thing to give up was not sweets, as I naively believed, but bread. And for the first time in three months I eat bread - or rather, whole grain buns: tasty, not as fluffy as their wheat counterparts, but much healthier.

Gluten free buns

Ingredients:

  • oat flour (gluten free) – 150 g
  • rice flour - 70 g
  • sesame flour - 30 g
  • flax seeds (crushed) - 25 g
  • buckwheat flakes – 25 g
  • dry yeast - 3 g
  • salt - 2 g
  • nut oil (olive or any other) - 30 ml
  • natural sweetener (I used it in the form of syrup) - 1 tbsp. l.
  • warm water - 150 ml
  • some sesame seeds for sprinkling
  1. Mix all dry ingredients. Add water, syrup and oil, stir. The dough turns out sticky. Cover the bowl with the dough with a towel and place in a warm place for 1.5 hours (I put the bowl with the dough on the second one with hot (not boiling water!) water).
  2. Form buns with wet hands (the dough will still be sticky, so it’s easy to form buns by wetting your hands with water), place on a baking sheet lined with baking paper, sprinkle with sesame seeds, cover with a towel and let stand in a warm place for another 30 minutes.
  3. Bake at 180 degrees in a preheated oven for about 20 minutes (depending on the size of the buns). Cool the finished buns on a wire rack.
