Ryazhenka 4%, BJU and calorie content per 100 g of product | |||
Calorie content 67 kcal | Proteins 2.8 g | Fat 4 g | Carbohydrates 4.2 g |
This is a drink that is made from whole cow's milk. Lactic acid bacteria are added to it. In Ukraine, this drink is prepared by adding cream to fresh cow's milk. After which this mixture is poured into pots and the drink is placed in the oven to simmer. The temperature in the oven is quite high, but the drink is not brought to a boil. It just takes a long time to heat up. After the milk turns caramel color, it is removed from the oven. The mixture is cooled and sourdough is added to it, but sour cream is often used for this. It is simply added to the resulting product and left for six hours in a warm place. In production, special bacteria are used. The drink has a sour taste and has a brown tint.
It was in Ukraine that people first began to make this amazingly tasty drink. The name ryazhenka comes from the word “yarn” (fry). The color changed because the milk contained some sugar, and at high temperatures it began to interact with proteins. Due to this, the color of the milk changes.
At home, this product can be prepared from already prepared baked milk. You just need to add sour cream to it and leave the product for several hours to ferment.
Nutritional value, calorie content and chemical composition
The rich chemical composition of fermented baked milk gives this product valuable properties, even despite its rather high calorie content for a fermented milk product.
In addition to beneficial bacteria, fermented baked milk contains vitamins:
Ryazhenka is also rich in minerals:
Just 500 ml (that's an average of two glasses) of this fermented milk drink - and the daily dose of essential vitamins and minerals will be in the body. There is no need to worry about phosphorus and calcium deficiency, which leads to dental problems and adversely affects the condition of hair and nails.
Ryazhenka is a high-calorie fermented milk product. However, don't be afraid of the caloric content. Lactic acid, which is contained in the drink, has a lot of useful properties and benefits the body, which justifies the extra calories.
Ryazhenka with 1% fat content has only 40 kcal, a product with 2.5% fat content has 54 kcal, a product with 4% fat content has 76 kcal, and a product with 6% fat content has 85 kcal. When choosing a product, give preference to a fatty one, even if you are on a diet, since only a drink with a high fat content will be beneficial due to the sufficient amount of lactic acids. Low-calorie fermented baked milk is depleted of beneficial compounds and will not be able to provide the body with a sufficient amount of vitamins and minerals.
The composition of the BJU product with a fat content of 2.5% per 100 g is as follows:
- Proteins - 2.9 g;
- Fats - 2.5 g;
- Carbohydrates - 4.2 g.
But the composition of a BJU product with a fat content of 4% per 100 g looks like this:
- Proteins - 2.8 g;
- Fats - 4 g;
- Carbohydrates - 4.2 g.
Thus, only the fat content changes, but the quantitative content of proteins and carbohydrates remains practically unchanged.
On average, one glass of fermented baked milk (which is 250 ml) contains 167.5 kcal.
Many people are afraid of the high calorie and fat content of the product - for this reason it is often excluded from the list of dietary products. But is this right? Let's take a closer look at the benefits of this product for the human body.

Harm of fermented baked milk to the body
The product is not recommended for use by people:

In individual cases, a feeling of bloating or heaviness in the stomach and increased gas formation may occur.
Glycotoxins are something to watch out for. The fact is that fermented baked milk has its own specific color, which is not typical for dairy products. Damage from this substance is equivalent to pathological processes developing in the body of a diabetic. Naturally, there are not so many glycoproteins in fermented baked milk, but you should not get too carried away with this drink. Cooking secrets
Previously, a mixture of milk and cream was simmered in large stone ovens, without boiling, until it acquired a light creamy tint. The thing is that the sugar contained in milk reacts with proteins when heated and forms the antioxidants melanoidins. They are what give baked milk its characteristic creamy color and delicate caramel flavor. Then sour cream was added to this mixture for ripening and in the process a new product was obtained - fermented baked milk.
Nowadays, of course, instead of ovens, microwaves, electric or gas ovens, yogurt makers and multicookers are used. Thermophilic lactic acid bacteria - streptococci and some types of Bulgarian bacillus - are often used as starter culture. Fermentation usually takes place from 3 to 6 hours. At the end of the process, fermented baked milk acquires its creamy caramel hue and characteristic fermented milk taste. In fact, it is a type of yogurt.
Results
So, fermented baked milk gives strength and energy, improves the functioning of the digestive and immune systems, and has a beneficial effect on the skin, nails and hair. The product is especially useful for people who play sports, as the vitamins and minerals in the drink help replenish lost energy after intense workouts. In addition, fermented baked milk makes muscles elastic and promotes their growth.
If you consume fermented milk product wisely, there will be no negative consequences for the body: only a positive effect.

Altai cheese Altai cheese was created in the thirties. This was a new technology that was developed taking into account the conditions that existed at that time in the Altai foothills. Cheese manufacturers have abandoned the hopeless idea of making cheese like Swiss cheese. Local products were unsuitable for this - as it turned out after numerous pointless attempts. As a result, such a variety of cheese as Altai was developed. Its main distinguishing feature from Swiss cheese was that it needed much less time to ripen, and the milk needed to be pasteurized. |
