Recipe description - Daily cabbage soup with sauerkraut and pork belly:

Prepare real Russian cabbage soup according to an old recipe described by the famous V.V. Pokhlebkin! The technology for all types of cabbage soup is the same: first, boil meat or mushrooms with roots and onions, then add cabbage. Initially, flour dressing was introduced into cabbage soup along with cabbage, but with the advent of potatoes, they were used to starch the broth and flour was abandoned, since it is believed that flour coarsens the aroma and worsens the taste of cabbage soup. Often the potatoes are then removed from the cabbage soup. Buckwheat is sometimes added to lean and green cabbage soup, where it is completely boiled. Real Russian cabbage soup does not contain any vegetable overcooking in fats or oil, so their taste is delicate and not harsh. Onions and spicy vegetables are added several times, which also gives additional flavoring. Often the cabbage soup is infused for 12 to 24 hours, first in the heat and then in the cold, sometimes the cabbage soup is frozen (the components acquire additional softness and tenderness). In Rus', cabbage soup with pork was common only in the regions bordering Ukraine. Mostly they used fatty beef, and in whole pieces. The role of whitening in cabbage soup is important - this is sour cream, yogurt or just milk, added to the finished cabbage soup.

Calorie table for ready-made meals for weight loss

You've probably noticed that every product you buy in a supermarket has its calorie content indicated on it. But what about ready-made dishes, which already include not one or two, but many products at once?

And if you consider that during the cooking process we use butter and various sauces, it is difficult to even imagine how many calories fit on our plate.

In order not to spend a long time looking for food packaging and not to worry about calculations, use the complete table of calorie content of ready-made dishes.

Why do you need to know your daily calorie intake?

Of course, if you are in great shape and eat right, then you don’t need to know about it.

If you can’t get rid of a couple of extra pounds even though you are on a diet, it is imperative to know the number of calories you eat per day.

After all, even if their quantity is insufficient, the body will not be able to waste your accumulated kilograms, fearing that “hungry” days will soon come.

For example, a girl, based on her age and activity, needs an average of 1600-2200 calories per day. In this case, food should include fats, proteins and carbohydrates in a ratio of 15%, 25% and 60%.

Using the table, you can choose your favorite dishes that will be tasty and satisfying. The table shows not only the calorie content of the finished dish, but also the content of proteins, fats and carbohydrates. All data is given per 100 grams of product.

The table shows that the lowest calorie content is for salads prepared from fresh vegetables and sauerkraut, and the highest is for holiday salads dressed with mayonnaise. Even Caesar salad, which many people mistakenly consider to be dietary, contains about 300 calories!

Remember that the table does not indicate the exact number of calories, since this indicator depends on what you season the salad with and in what quantity. For example, mayonnaise and sauces, especially high-fat ones, can turn a healthy light salad into a very fatty and high-calorie salad.

It is better to replace mayonnaise with unsweetened yogurt, which has only 15 calories per tablespoon and less than one gram of fat. As for the usefulness of the included ingredients, for example, eggs and meat are a good source of protein, vegetables contain vitamins and fiber. While dishes with different types of sausages and smoked meats contain salt, preservatives and a lot of fat.

Calorie table for soups

The same can be said about the calorie content of soup. Any dish directly depends on the products that are included in it. It is also important what broth the soup was prepared with - lean beef, fatty pork or diet chicken. The table shows that the broth contains a minimum number of calories, but when you add cereals, pasta, or frying in oil, the calorie content increases significantly.

Origin of fresh cabbage soup

The dish was born within Russian cuisine and has been known for a long time. Presumably the word “cabbage soup” comes from the Old Russian “s’ti”. This name united all nutritious liquid dishes or thick breads. Cabbage soup is also called: borscht shti, shti, turnip shti, cabbage shti. It is believed that they appeared back in the 19th century, when white cabbage was brought from Byzantium.

The poor population prepared cabbage soup from everything that was at hand: they used meat trimmings, crushed lard, turnips, onions, and rye flour. For the elite, cabbage soup was prepared from meat, cabbage, noble fish, mushrooms, various herbs and roots, and also based on a sour dressing.

During its existence, the recipe for cabbage soup has reached us almost in its original form. The only thing that was removed was the flour-based roux, which added thickness to the soup. The range of spices used has also increased.

Recommendations for the recipe “Fresh cabbage soup”

There is a lot of talk about how healthy first courses are. And if these dishes also contain a lot of vegetables, then they seem to become simply indispensable for the human body. In this regard, the culinary recipe “Shchi from fresh cabbage” can be considered just a godsend. There are a lot of vegetables, onions, potatoes, tomatoes and most importantly fresh cabbage.

Although the recipe calls for pork, there is nothing wrong with using beef. In my opinion it will be even tastier with beef.

How to cook cabbage soup from fresh cabbage with pork

It is advisable to buy meat with bones (the lower part of the brisket, if you decide to take beef). But if you still bought pork, then it’s better to take the upper part of the thigh.

Rinse the meat first under running tap water. Fill more than half the pan with water. Add salt to taste and place the prepared meat there.

Peel the onion, wash and finely chop. Next, put 2-3 tablespoons of vegetable oil in a frying pan, heat and fry the chopped onion.

Place the peeled and diced potatoes into a separate pan.

The tomato will also have to be washed and finely chopped.

Add the chopped tomatoes to the pan with the onions, cover with a lid and continue frying for another 5-10 minutes.

It's time to process fresh cabbage. Remove the top leaves and wash under running water.

The cabbage also needs to be finely chopped as in the photo.

While we were busy processing the vegetables, the meat had to cook. Take the meat out of the pan and place it on a plate.

Place cabbage and potatoes in the pan with meat broth where the meat was cooked.

Take a frying pan with tomatoes and onions.

Add fried onions and tomatoes from the frying pan to the pan with cabbage and potatoes.

Also cut the cooled meat into pieces and add to the pan with vegetables.

Stir. It will take about an hour to cook. Fresh cabbage soup with pork is ready. Bon appetit!
