Ingredients for curd dough:

  • Low-fat cottage cheese or 0.6% fat 1 pack – 186 grams
  • Wholemeal self-raising flour, wheat – 320 grams
  • Baking powder 1 tsp. – 4 grams
  • Sweetener – 4 grams (I have stevia in tablets).
  • Chicken egg 1 pc. – 57 grams
  • Banana 1 pc. – 114 grams
  • Milk 1.5% fat 6 tbsp. – 70 ml

Ingredients for filling:

  • Chicken egg 4 pcs. – 226 grams
  • Ricotta cheese 1 pack – 250 grams
  • Powdered milk, skimmed – 50 grams
  • Sweetener – 4 grams (I have stevia in tablets).

Filling ingredients:

  • Gooseberries – 470 grams

Auxiliary ingredients (optional):

  • Wheat bran – 10 grams
  • Sunflower oil – 3 grams

Step-by-step preparation of cottage cheese pie - with photos

Preparing curd dough for gooseberry pie:

  • Sift whole grain flour, add baking powder, sweetener and cottage cheese. Mix everything well.
  • Prepare banana puree using a blender or mash it with a fork. Mix banana puree with milk and 1 egg using a mixer at low speed or with a whisk. You can immediately use a blender, just throw everything into the blender bowl, burn-burn and you're done!
  • Combine flour and banana mixtures. Knead the dough well. It should not be too sticky, but not very thick either.

  • Now we prepare the filling. Using a mixer (or whisk), beat 4 eggs, Ricotta cheese, sweetener and skim milk powder.

  • Wash the gooseberries, dry with a paper towel and remove the stems. It is convenient to do this with scissors.

  • Grease the baking dish with sunflower or olive oil. But if you use silicone molds, then this is not necessary. I have a square silicone mold with a diameter of 21 cm. We lay out our curd pie in layers. The first layer is curd dough. It needs to be sprinkled with a little bran. Bran can be replaced with flour, starch, homemade ground crackers. We lay out a second layer on the bran - washed and dried gooseberries.

  • Fill the gooseberries with the last third layer - cheese filling. Bake the curd pie with gooseberries in a well-heated oven at 180 degrees for 40-50 minutes.

  • We take our pie out of the oven and let it cool. After cooling completely, carefully remove the cake from the pan and cut into portions.
