Broccoli with egg in a frying pan is perhaps the simplest and also fastest dish that you can prepare from this not only tasty, but also healthy vegetable. Broccoli is a close relative of cauliflower; it is for this reason that these vegetables taste very similar to each other and all recipes for cauliflower can be safely applied to broccoli.
You can fry broccoli in a frying pan in different ways. For example, with vegetables, mushrooms, cheese, meat or eggs. Today we'll look at how to quickly cook fried broccoli with eggs in a frying pan. This broccoli will taste similar to fried broccoli in batter, but it will still be more tender, since the batter contains flour, and the cabbage pieces will come out with a lot of dough.
Broccoli with eggs and cheese fried in a frying pan is no less tasty . I’ll tell you how to prepare it at the end of the main recipe. I didn’t make a step-by-step recipe for fried broccoli with eggs, since it is very simple and I think that everything will be very clear from the description.
Ingredients:
- Broccoli – 400 gr.,
- Eggs – 2 pcs.,
- Salt - on the tip of a teaspoon,
- Sunflower oil for frying – 50 ml.,
- Cumin or sesame - a small pinch,
- Parsley - a couple of sprigs.
How to Select and Prepare Vegetables for Cooking
Choosing broccoli is not as difficult as it seems at first glance. In order not to make mistakes, you need to pay attention to the following points:
- The color of the vegetable should be uniform. Interspersed with a yellowish and light green tint indicate insufficient ripeness of the cabbage. But the slightly purple tint on the inflorescences opposite is a sign of the juiciness and rich taste of broccoli;
- There should be no black spots on the product, indicating damage by bacteria and insects;
- Stale cabbage is also indicated by a whitish coating on the vegetable. It is important to examine the cutting for its presence, since it is on it that it is usually less noticeable;
- Cabbage inflorescences should be firm and “fluffy”. Excessive softness indicates that the expiration date has expired or is coming to an end;
- When choosing frozen broccoli, you should pay attention to the amount of ice in the bag. Its excessive presence indicates improper storage and that the product has been frozen several times.
Guided by these simple rules, you can be sure of the freshness of the product. The structure of broccoli has an uneven surface. Because of this, dust and dirt can accumulate there. Therefore, it is very important to prepare the vegetable for consumption before using broccoli as an ingredient in a dish. To do this you need:
- Rinse the vegetable thoroughly;
- Divide it into parts.
In order for the product to be clean, it must be soaked in water for 20 minutes, placing the stem up. This need arises because broccoli has a short shelf life and is treated with nitrates to maintain freshness. Therefore, simply rinsing with water will not be enough.
After the specified time, the cabbage should be rinsed well under running water. This will wash away any remaining dirt.
After washing, the broccoli is divided into parts. This is done very simply, just manually divide the cabbage into inflorescences. It is not necessary to use a knife.

Benefits, composition and calorie content of broccoli omelet
If the recipe is limited to the classic set of milk and eggs, to which blanched inflorescences are added, the calorie content of the omelet does not exceed 120 kcal per 100-gram serving. Broccoli is classified as a dietary product, and therefore meat products, especially fatty ones, are rarely added to omelets with it.
Although there are exceptions, for example, to reduce the total calorie content of breakfast, adding a few broccoli florets to the dish is a very successful and healthy solution. The vegetable is rich in vitamins, and deep-frozen storage conditions allow them to be preserved in sufficient quantities.

Cooking recommendations
A large number of broccoli recipes use cabbage florets as a base. However, the stem of the plant can also be used for cooking. First you need to peel it from the skin; the easiest way to do this is to use a potato peeler. Inside it is a soft and juicy core, which is well suited for making soups, stews and casseroles. Before adding to the dish, the stems need to be boiled in lightly salted water for 3-5 minutes.
Traditional methods of preparing inflorescences include the following:
- Cooking. The asparagus cabbage must be placed in boiling water and boiled for 5 minutes. If you remove the cabbage from the stove, it will continue to be exposed to heat. For this reason, at the end of cooking, transfer the broccoli to a colander and rinse under cold water. This action will help preserve the color of the vegetable and its density.
- For a couple. Cooking time depends on taste preferences: to get soft and melt-in-your-mouth cabbage you need to cook for about 12 minutes, for juicy and crispy cabbage - no more than 5-7 minutes.
- Blanching. For small cabbage inflorescences, treatment for 2-3 minutes is sufficient.
- Baking. Pre-spray the product with oil and place evenly on a baking sheet. Exposure time is no more than 10 minutes in a preheated oven.
Note! There are many options for serving broccoli. The most popular diet sauces/dressings include: extra virgin olive oil, low-fat sour cream, plain Greek yogurt, natural soy sauce and mustard with lemon juice.

Interesting ideas for decorating and serving cauliflower omelet
An omelette with broccoli in a frying pan comes out quite pale, and the cabbage inflorescences in it look like dark specks. For aesthetics, you need to add some color to it. Sun-dried tomatoes can be placed in the dish itself, but it is better to decorate portions with them. Another, no less colorful vegetable, bell pepper, is cut into strips and laid out in simple patterns over the omelette.
If the pepper fruits are large, cut them into narrow rings and place pieces of the finished dish inside.
Cherry tomatoes, cut in half, are used to imitate fly agaric caps by placing them on broccoli stems protruding from the omelette. Of course, omelettes are not left without herbs, either sprinkled on the dish or offered separately. A portion-sized frying pan can be placed on a decorative board. In this case, remove the omelet from the heat a little earlier, preventing it from drying out and the broccoli darkening.
Culinary secrets
A few secrets will help you prepare broccoli dishes even easier and tastier:
- It is better to buy such cabbage at the market. In this case, the likelihood of containing nitrates will be much lower than when purchasing a vegetable in a supermarket;
- the most delicious broccoli is in the fall and until the end of spring, during this period it is the most juicy and has a bright, rich taste;
- This cabbage goes well with sour cream. Sauces prepared on its basis are suitable for any broccoli dish;
- Vegetable sprouts are also suitable for cooking. They can be stewed, boiled and baked. However, this will take longer as they are denser;
- It's better not to buy frozen cabbage. Most often, vegetables that are no longer completely fresh and unsuitable for sale are used for these purposes. If there is a need to preserve the freshness of the product, then pre-washed and disassembled broccoli into florets can be frozen yourself. This approach ensures that the product does not lose its properties when defrosting.
Broccoli is the basis for many dishes, including dietary ones. Its delicate taste and beneficial properties make this product a frequent guest on the tables of many families.
Secrets of choosing broccoli
The edible part of the vegetable ripens unevenly, and ripe broccoli, uniformly green-gray in color, is ideal for any dish. The mass of the head should be about 600 g, with a deviation of no more than 15% in any direction.
Secrets of choosing broccoli
In addition to color, it is also worth assessing the uniformity of fit of the inflorescences: in high-quality vegetables they form a lumpy surface without obvious separation into parts. It is not recommended to purchase broccoli with traces of moisture; this is a sign of additional processing of the vegetable in order to extend its expiring shelf life. Frozen cabbage should be judged by color, just like fresh cabbage.
