Where can bromates and semicarbazide be in bread?

clarifies that in addition to flour, the recipes of many mixtures for multigrain breads include wheat gluten:
— Various seeds, grains, and flakes destroy the cohesion of the gluten framework of wheat and the structure of rye dough, which leads to a decrease in the volume, dimensional stability and porosity of the bread crumb. For example, hearth bread will be flat, with a slightly loose crumb. The addition of dry gluten improves the elastic properties of dough and crumb of bakery products. For this purpose, baking improvers are also added to some MZT bread mixtures. (Among them there may be bromates - editor's note).

Homemade rye bread with bran turns out to be much tastier than any store-bought one, somewhat reminiscent of Borodino bread, but still superior to it. You can prepare such dietary baked goods in special electrical appliances, but now you will be presented with a recipe using an ordinary oven. Be sure to take note of this amazing recipe.
Ingredients:
- milk – 0.25 l;
- rye bran – 60 g;
- sugar – 0.5 tsp;
- rye flour – 150 g;
- salt – 1 teaspoon;
- wheat flour – 180 g;
- vegetable oil – 45 ml;
- dry yeast – 2 tsp.
Cooking method:
- Mix warm milk with yeast and sugar. Leave for a while in a draft-free place. The liquid should be covered with a foam cap.
- When fermentation takes place, pour vegetable oil into the mixture and add salt. Stir carefully.
- Add wheat flour sifted twice. Stir until the mixture becomes homogeneous and thick.
- Add bran and rye flour in small portions. Keep stirring.
- When the mass becomes dense, place it on a wooden board. Continue kneading with your hands.
- Cover the dough with a towel or film and leave it warm for an hour.
- Grease the mold with vegetable oil.
- Punch down the dough. Place it in the mold. Leave it to rise for another hour.
- Preheat the oven to 185 degrees.
- Using a sharp knife, make several shallow diagonal cuts into the dough. Place the pan in the oven for an hour and a half.
With barley
Product basket:
- wheat flour – 200 g
- barley flour – 150 g
- dry yeast – 5 g
- milk – 200 ml
- chicken egg - 1 unit.
- sea salt – 5 g
- ghee - 1 tbsp. l.
- corn oil – 70 ml
In this recipe, you can replace barley flour with barley ground in a coffee grinder, bran, rice, corn or buckwheat flour.
Let's start cooking:
- Combine milk with yeast, egg and melted butter. Mix everything.
- Gradually stirring, add flour to the milk.
- Mix the dough until it reaches a consistency reminiscent of sour cream.
- Grease the baking dish with corn oil, pour out the dough and place in the oven preheated to 200 degrees. Bake for about 35 minutes.
