  1. The first step is to make a starter: dilute 40 g of wheat flour and yeast in warm water. Allow to brew for some time and increase in volume.
  2. Make a mixture of barley and rye malt, add warm water. Pour until a liquid dough-like consistency forms.
  3. Mix the remaining dry ingredients and add them to the malt solution in small portions. If necessary, add water.
  4. The batch is put in a warm place for 4–5 hours.
  5. After the allotted time has passed, pour in 6–7 liters of boiled and cooled water and mix thoroughly. Additionally include mint, cumin and sourdough.
  6. The wort is left warm for 12 hours.

The finished kvass is filtered. The remaining grounds are used later as a starter for a new portion of the drink.

With kefir or milk
