Beat the whites with a whisk. Add a few drops of lemon juice for easier whipping. Beat the whites until stiff peaks form. We combine the yolks with the whites. Gently mix from bottom to top. Making Dukan squash soup

  1. We clean and chop the vegetables: onion into half rings, zucchini into cubes, three carrots on a grater, divide the cabbage into small inflorescences.
  2. Pour oil into a small cauldron, and as soon as it starts to sizzle, add the onion. After frying the sliced ​​onion until golden brown, add carrots to it and also fry until crusty.
  3. Next we put the zucchini and cabbage into the container. Salt everything, mix, season with pepper and fill with water so that the water is equal to the level of the vegetables.
  4. At medium temperature, cook the soup for 20 minutes, and then transfer the boiled vegetables into a blender using a slotted spoon and grind everything into porridge, add cheese, 1/3 of the broth and mix again.

Pour the soup into bowls and add 1-2 slices of quartered eggs and a sprig of parsley to each serving.

Option 2: soup with zucchini, shirataki and meatballs

Ingredients

  • Young zucchini – 2 pcs.;
  • Bell pepper – 1 fruit;
  • Carrots – 0.2 kg;
  • Onion - 2 onions;
  • Garlic cloves – 3 pcs.;
  • Fresh tomatoes – 3 pcs.;
  • Tomato paste without sugar – 1 tbsp;
  • Ground turkey – ½ kg;
  • Selected egg - 1 pc.;
  • Salt – 2 tsp;
  • Ground black pepper – 1 tsp;
  • Bay leaf – 1 leaf;
  • Any greens – 100 g;
  • Shirataki spaghetti – 80 g;

Making spaghetti soup

  1. From finely chopped onions, garlic and carrots cut into ¼ circles, fry with a minimum of oil, then add diced tomato and tomato paste to the container. Simmer the soup dressing under the lid for 5 minutes and turn off.
  2. In a cauldron with a small amount of oil, fry the peppers and zucchini cut into strips and pour in 4 cups of boiling water. Cook the soup for 15 minutes, and then add dressing, salt (1 tsp), pepper (½ tsp), bay, shirataki spaghetti and continue cooking.
  3. For the meatballs, mix the minced meat with the egg, season with salt (½ tsp) and pepper (½ tsp) and form dense meatballs, which we carefully lower into the soup, reduce the heat to low and simmer the first dish for another 15 minutes.

Serve the soup with finely chopped herbs.

Option 3: creamy fish soup with zucchini

  • One zucchini (250 g), peeled, grated on a medium grater, pour 1-2 tbsp. water (depending on how thick the soup you want) and cook until the vegetable is ready over low heat.
  • Then add 100 g of Philadelphia cheese 3% to the pan and dissolve it, stirring constantly.
  • Take 200-250 g of smoked salmon, chop it finely and also add it to the zucchini. Taste the soup for salt and add more salt if desired. After 5 minutes the first dish is ready.

For this soup, you can also take any fresh red fish or mackerel, as well as herbs and spices to taste.

Dukan Diet: 10 Basic Principles

1. During the attack phase, only protein foods are allowed, all cereals, fruits, berries and even vegetables are excluded.

2. You can't eat fried food. You can stew, boil, bake, steam. In general, cooking without using fat.

3. You can add various spices to the dish to suit your taste.

4. You can eat as much as you want. Feeling hungry is not allowed.

5. You need to drink a lot of water daily (from 2 liters).

6. You need to eat oat bran every day. It can be consumed in its pure form or added to fermented milk products, or baked with bran protein bread.

7. The time for each phase depends on the weight you need to lose. The more excess weight you have, the more days each phase will last.

8. You need to take walks every day. You must “step away” for at least 20 minutes.

9. Long-term diet. Consists of 4 phases. Promises that if you follow all the rules, you will not gain weight again.

Zucchini in the oven according to Dukan

Dukan Stuffed Zucchini

Ingredients

  • Minced chicken - 0.5 kg;
  • Low-fat curd mass – 0.2 kg;
  • Zucchini – 4 pcs. or 1 kg;
  • Green sauce “Salsa Verde” - 220 ml;
  • Sea salt - to taste;

Preparation

  1. Wash the zucchini, but leave the skin untouched. Cut each zucchini in half lengthwise and carefully cut out the inside with a spoon, leaving about 7 mm of pulp on the peel.
  2. Mix the minced meat with cottage cheese and finely chopped zucchini pulp. Salt the filling to taste, then mix it with salsa verde sauce.

We fill the “boats” with the prepared mixture and bake them in the oven for half an hour at 220 o C

Note

You can make your own salsa verde sauce for stuffed zucchini at home. To do this, load the following into a blender cup:

  • 60 g parsley,
  • 35 g mint,
  • 10 g basil leaves,
  • 5-6 pickled cucumbers,
  • 4 garlic cloves,
  • olive oil 10 tbsp,
  • black pepper powder (1 tsp),
  • sweet mustard (10-15 g).

Beat all ingredients until smooth, but not puree.

Zucchini cutlets with veal

Dukan squash and meat cutlets are an excellent addition to rice or shirataki pasta.

Ingredients

  • Zucchini – 0.2 kg;
  • Onion – ½ head;
  • Minced veal – 80 g;
  • Corn starch – 30 g;
  • Egg – 1 pc.;
  • Salt – ½ tsp;
  • Spices - to taste;

Cooking cutlets according to Dukan

  1. Grate the zucchini, squeeze out the excess liquid, and then mix the vegetable mixture with the minced meat.
  2. Chop the onion very finely and mix it into the cutlet mass, to which we also add salt, starch, spices and an egg. Mix into a uniform mass.
  3. We form the resulting mixture into balls and place them on a baking sheet on parchment paper. Bake the cutlets in the oven for 30 minutes at 185 o C.

Diet features

Casserole

Ingredients:

  • chicken fillet (4 pcs.);
  • eggs (4 pcs.);
  • zucchini (6 pcs.);
  • cheese (70 g);
  • milk (5 tbsp);
  • salt and pepper (to taste).

How to cook:

  1. Chicken fillet and pre-washed zucchini need to be cut into small squares. Beat the eggs, adding milk to them.
  2. In the resulting mixture, you need to mix pieces of chicken and chopped vegetables, then place the contents of the container in a silicone mold.
  3. For a crispy crust, grate the cheese and then sprinkle it over the fillets and zucchini. The resulting mixture should be baked at a temperature of 185 degrees.
  4. Cooking time will be half an hour.

With minced meat

Ingredients:

  • minced meat (600 g);
  • cottage cheese (300 g);
  • zucchini (5 pcs.);
  • Salsa Verde sauce (200 ml);
  • salt (pinch).

How to cook:

  1. Cut the washed zucchini in half. Remove the inside of the vegetable with a spoon, leaving 8 mm of pulp on the peel, and cut it.
  2. Mix chopped chicken meat and cottage cheese. Add the vegetable to the resulting pulp.
  3. Mix all ingredients together with Salsa Verde. The remaining zucchini peel should be filled with the resulting mixture.
  4. Bake zucchini “boats” at a temperature of 220 degrees. The baking time will be half an hour.

Veal cutlets

Zucchini and veal cutlets are a great addition to rice or pasta.

Ingredients
:

  • zucchini (400 g);
  • minced veal (200 g);
  • onion (1/2 head);
  • corn starch (60 g);
  • egg (1 pc.);
  • salt and spices (pinch).

How to cook:

  1. Wash the zucchini and grate it. Squeeze out the resulting pulp and mix it with the minced meat. Finely chop the onion.
  2. Add the chopped vegetable and remaining ingredients to the zucchini pulp. Mix all products thoroughly until smooth.
  3. Place the mixture on a baking sheet lined with parchment paper.
  4. The preparation time for this product will be about 30 minutes. The cutlets need to be baked at 185 degrees.

Broccoli casserole

Ingredients:

  • minced turkey (400 g);
  • zucchini (2 pcs.);
  • broccoli (250 g);
  • onion (1 pc.);
  • egg (2 pcs.);
  • low fat kefir (1/2 cup);
  • cheese (1 tbsp);
  • greenery;
  • oil;
  • salt (to taste).

How to cook:

  1. Cut the zucchini into circles, chop the onion with a knife. Add minced meat to the onion. The resulting slurry must be mixed thoroughly.
  2. Scald the cabbage with boiling water and place it in a colander to drain off excess liquid. Mix the egg with kefir. Salt the resulting mixture, add pre-chopped herbs to it.
  3. Coat a baking dish with a piece of butter, then add chopped zucchini. Place minced meat on vegetable mugs.
  4. On top you need to place the cabbage inflorescences and the remaining zucchini slices. The contents of the container will only need to be covered with the prepared mixture of kefir, eggs and cheese.
  5. The oven temperature should be 200 degrees.

Ingredients:

  • zucchini (500 g);
  • egg (1 pc.);
  • oat bran (2 tbsp.);
  • sunflower oil;
  • greenery;
  • salt and pepper (pinch).

How to cook:

  1. The zucchini, washed and peeled in advance, must be chopped on a fine grater.
  2. The resulting slurry must be squeezed out so that excess liquid flows out, after which you can add an egg and oat bran to the mass.
  3. The resulting slurry must be left for some time so that the mixture swells a little.
  4. Add chopped herbs and pre-grated cheese to a container with vegetables, eggs and bran.
  5. Place the resulting mixture on a baking sheet lined with parchment paper.
  6. The cooking time for zucchini pancakes will be 25-30 minutes. These meatballs need to be baked at a temperature of 185 degrees.

Dish with tomatoes

Ingredients:

  • zucchini (700 g);
  • tomatoes (400 g);
  • bulbs (3 pcs.);
  • cheese with low fat content (100 g);
  • salt and spices (pinch).

How to cook:

  1. Place a greased frying pan on the fire. While the container is heating up, finely chop the onion. Place the chopped vegetable in the pan. Fry it until transparent.
  2. Chop the pepper and mince the garlic. Add the resulting slurry to the frying pan. Fry the contents of the container for half a minute. Grate the carrots. Add the chopped vegetable to the garlic and onion.
  3. Cut the bell pepper into cubes. Add it to the pan. Fry vegetables for 10 minutes. Add minced meat, chopped parsley, and thyme to the vegetables. Fry the resulting mixture for 3 minutes.
  4. Take a large zucchini and peel it. Cut the vegetable into slices 5 cm thick. Remove the seeds with a spoon.
  5. Pour boiling water over the sliced ​​zucchini, then place the “saucers” on a baking sheet. Place a mixture of meat and vegetables inside the peel. The temperature in the oven should be 180 degrees. Cooking time – 35 minutes.

How to choose zucchini? The vegetable should have a soft skin that is easy to pierce. The length of such a fruit should not exceed 20 cm. Zucchini with small seeds is good for frying. If the housewife intends to stuff the zucchini, there is no need to peel the vegetable.

Dukan zucchini in a slow cooker

Dukan Zucchini Casserole

This casserole will appeal even to those who do not adhere to the Dukan protein-vegetable diet. Even children who find it difficult to feed vegetables will appreciate the most delicious, healthy and simple treat.

Ingredients

  • Chicken breast – 0.4 kg;
  • Squash or zucchini pulp – 0.2 kg;
  • Selected chicken egg – 2 pcs.;
  • Oat bran – 30 g;
  • Kefir (yogurt) – 40 g;
  • Tomatoes – 300-400 g;
  • Low-fat cheese – 35-45 g;
  • Dried fenugreek herb - optional;
  • Salt - 2/3 tsp.

Preparation

  1. Grind the squash pulp coarsely, and soak the bran in kefir for 10 minutes.
  2. After the specified time, combine the twisted chicken fillet with zucchini, soaked bran, eggs, salt and spices in a common bowl.
  3. Knead the homogeneous minced meat and distribute it over the entire surface of the bottom of the multicooker bowl. Don’t forget to grease the bowl first.
  4. Then spread the tomato cut into thin circles in an even layer over the meat and vegetable mass and cover everything on top with thin slices of cheese.

The casserole should be cooked for an hour in the “baking” mode. Remove the finished dish after it has cooled slightly.

Lasagna according to Dukan

  • Cut the chicken breast or turkey fillet (0.45 kg) boiled in salted water until tender into small slices.
  • In a separate cup, mix ½ tbsp. kefir 1% with low-fat cottage cheese (120-150 g) and finely chopped dill until sour cream.
  • Now we take 2 peeled young zucchini, 2 fresh tomatoes and 1 large bell pepper, with the seed core removed, and cut them into thin circles and rings.
  • We also need low-fat hard cheese (30 g), which should be finely ground.
  • Place lasagna: - place a layer of salted zucchini circles on the bottom of an oiled multi-cooker bowl, - then pepper, - curd mass, - meat filling, - and then tomatoes and cheese.

We add a little salt to each layer so that the resulting lasagne is not overly salty or, on the contrary, bland. We set the “Baking” program, the timer for 80 minutes and wait for the lasagna to finish cooking.

The third phase of the Dukan diet is “Consolidation”

You are approaching this stage having already lost weight. But the lost pounds should not return. Therefore, the result needs to be consolidated. This phase lasts about 10 days for each kilogram lost. It's not difficult at all here.

During the week you need to do one day only on squirrels, as in an attack. Dukan recommends making Thursday a protein day. On other days, you can add cereals, whole grain bread, durum wheat pasta, previously prohibited vegetables (potatoes, legumes, corn), hard cheeses, and fruits to proteins and vegetables.

Every day you can eat one fruit, 2 pieces of black bread. 2 times a week pasta or porridge without fat, fatty meat (pork, lamb). 2 meals a week of absolutely anything (just not in a row), even confectionery and alcohol.

Fried zucchini according to Dukan

  1. Take a small young zucchini (1 piece), wash and cut into 5 mm thick slices, then add salt and fry in oil (35 ml) until tender.
  2. Place the fried zucchini on a napkin to remove excess absorbed oil.
  3. Let's prepare the filling. Beat 120 g of curd mass 1% with a mixer until smooth, add some salt, mix with 1 clove of garlic, passed through a garlic press and half a bunch of dill.
  4. Cut cherry tomatoes (2 pcs.) into three slices each, so that you end up with 6 slices.
  5. Coat the zucchini plates with curd mixture, place a slice of tomato along the edge and roll the zucchini into a roll.

Zucchini with garlic according to Dukan

  • We clean young thin zucchini (0.3 kg), cut into circles, then add salt to taste and fry until golden brown.
  • For dressing, mix crushed garlic (3 cloves), salt (¼ tsp), 1 tsp. 9% vinegar, 35 ml olive oil and 2 tbsp. finely chopped dill.
