Place the curd mass into molds greased with butter. 8. Place the molds with cottage cheese on the wire rack. Set the “For a couple” mode. Cooking time: 20 minutes. 9. Preparation

  3. Pour the dough into the bowl and spread it over the surface with a spoon.
  4. Then we set the baking parameters - select the “Baking” mode, set the time to 65 minutes, temperature – 110 degrees. These parameters may vary depending on the multicooker model.
  5. After this time, do not open the multicooker lid; leave the pudding to simmer for another 40 minutes.
  6. Now you need to place the special mold that comes with the multicooker (it is also used for steaming dishes), and sharply turn the pudding onto a plate. If necessary, use a wooden spatula to remove the sides of the pudding from the walls of the multicooker bowl so that the finished dessert comes out onto the plate more easily.
  7. Cut the finished curd dessert into portions, each can be topped with syrup, ready-made topping, decorated with fresh berries, powdered sugar or fruit slices.

Which cottage cheese is best for pudding?

Cottage cheese is a suitable product for fasting days, but it should be consumed only in low-fat form. It is advisable that it is not too sour. If it is more sour than necessary, then it needs to be poured with the same amount of milk, let stand for 1-2 hours, then discarded in a colander, let the milk drain and press again. It is also recommended to eat homemade cottage cheese, as it contains more useful substances:

  • amino acids that prevent fatty liver;
  • protein;
  • calcium;
  • phosphorus.

You can prepare this milk product yourself.

Add 1 tbsp to low-fat boiled milk. 10% calcium chloride solution (from the pharmacy); place the milk in a boiling water bath for 20-30 minutes until a curd forms. Place the curd in a colander or in a gauze bag, drain the whey, wipe, and cool.

However, there are also dietary recipes for this dish, in which sugar is usually replaced with fructose, and egg yolks are completely excluded, adding only whites. Here is the simplest recipe that requires a minimum of ingredients.

In grated low-fat cottage cheese (500 g) put 1 egg white, whipped with 2-3 tbsp. l. sugar or sweetener, 2 tbsp. l. semolina, ¼ bag of vanillin, ½ tsp. salt. Mix everything thoroughly, add 100 g of washed and dried raisins. Place the curd mass on a baking sheet and bake in the oven for 20-30 minutes. Can be served with 10% sour cream.

Dietary curd pudding will turn out no less tasty if, instead of raisins, you add dried apricots, which are rich in vitamin C, which helps strengthen the immune system, and vitamin A, also called the vitamin of youth. You can add carrots to the casserole, pre-cooked and minced.

You can improvise and add prunes, dried cranberries, pears, dogwoods or any other dried fruits.

Dietary curd pudding will be useful if it is prepared with an apple. To do this, add peeled, diced or grated apples to the curd mass. This fruit is placed in the following ratio: for 500 g of cottage cheese - 250 g of apples. Apples are low in calories, so they are included in a variety of diets. In addition, they are unusually rich in vitamins A, C, PP, K, E, P, and folic acid.

You can cook the casserole not only in the oven, but also in the microwave and slow cooker. Microwaving will take significantly less time than baking.

Mix 1 egg white with 1 tbsp. l. sugar, add vanillin and salt to taste, then - 100 g of cottage cheese and 1 tbsp. l. semolina. Mix everything well and place in a microwave-safe dish. Cook for approximately 5-7 minutes.

Pudding prepared in a slow cooker is rightfully considered the most dietary. This dish will be more nutritious if cooked with rice.

Boil 1 tbsp. rice, cool, mix with 1-2 egg whites and 300 g of cottage cheese, add 2 tbsp. l. sugar and low-fat sour cream, 1/3 tbsp. raisins Mix well. Grease the multicooker bowl with olive oil, place the prepared mixture in it and smooth it out. Set the “Baking” mode and bake for 60 minutes. After cooling, cut into pieces. You can lightly coat it with honey.

Dietary pudding recipes are simple, but we should not forget that they still contain a fairly large amount of calories, so people on a diet are recommended to include dietary pudding in their menu no more than 1-2 times a week.

  • 150 g (6-7 heaped tablespoons) - semolina
  • 350 ml - milk,
  • 4 eggs,

Preparation

  1. Pour semolina into cold milk and stir.
  2. Cook until thick for 5 minutes.
  3. Cool; after cooling, the mass should thicken greatly.
  4. Beat the yolks with 100 g of sugar and pour into the cottage cheese, add vanillin. Beat with a mixer.
  5. Add the cooled semolina mass and beat with a mixer again.
  6. Separately, beat the whites with the remaining 50 g of sugar and add to the dough.
  7. Mix and place in a pan greased with vegetable oil.
  8. Bake in an oven preheated to 180 C until browned.
  9. When the pudding has cooled, you can serve with sour cream.

There are some requirements for the ingredients that must be met if you want to get a truly light and healthy dessert. For example, it is optimal to take granular cottage cheese with a fat content of 9% or more; you can use homemade cottage cheese. It is not advisable to use curd mass, since it often contains starch and other thickeners, as well as all kinds of additives that negate the benefits of dietary pudding.

As you can see, the recipe does not contain flour, it is replaced by starch. If you don’t have corn in the kitchen, potato is also suitable, you just need to use it in slightly smaller quantities. Well, as a last resort, just replace the starch with white wheat flour.   • 0.5 kg of cottage cheese (I took soft and thicker)
  • 5 eggs
  • half a glass of sugar
  • 0.5 cups sour cream
  • 2 tbsp. potato starch
  • a pinch of vanillin (can be replaced with vanilla sugar)
  • butter for greasing the pan

First, I grind the cottage cheese through a sieve (for pudding, try to choose softer, not dry cottage cheese, which I succeeded in).

I separate the whites from the yolks, after which I put the whites in the refrigerator - I will need them later.

I add yolks, a pinch of vanillin, starch and sour cream to the prepared cottage cheese.

Beat with a mixer at medium speed until the curd mass reaches a creamy consistency.

Now it’s the turn of the whites - changing the mixer attachment, I beat them into a fluffy foam,

after which, without turning off the mixer and continuing to beat, I add sugar in doses (1 tablespoon at a time) - the result is a shiny, strong foam. If you have a restrained attitude towards sweets, you can reduce the amount of sugar. Gently fold the egg whites, whipped with sugar, little by little into the curd mass.

That's it, the pudding dough is ready - its texture is soft and airy.

I grease the multicooker bowl with butter and carefully place the dough into it, leveling it with a spatula before sending it to bake.

I bake the curd pudding in the “baking” mode for 45 minutes, setting the temperature to 150 degrees. As soon as the sound signal notifies me that the program has ended, I turn off the multicooker and leave the pudding to cool right in it, without opening the lid.

The wait, of course, is excruciating, since the aromas so awaken the appetite and the desire to taste this wonderful, delicate dessert while still hot, but do not give in to temptation - chilled pudding is much tastier!

To prepare curd pudding in the microwave according to this recipe, it will take exactly 7 minutes. The dish turns out very tender, healthy and tasty. The cottage cheese for making pudding must be homogeneous, without grains, otherwise it will need to be rubbed through a sieve. It is best if the fat content of the cottage cheese is in the range of 5-9%.

Ingredients

To prepare curd pudding in the microwave you will need:

cottage cheese - 300 grams;

salt - 1 pinch;

egg - 1 piece;

milk - 120 ml;

sugar - 3 tbsp. l.;

semolina - 3 tbsp. l.

Cooking steps

Place cottage cheese in a bowl.

Add egg, salt, sugar to cottage cheese and mix.

Add semolina to the resulting mass.

Add milk to a mixture of cottage cheese, sugar, salt, eggs and semolina. Mix thoroughly or beat with a blender. The mass should be smooth and homogeneous, like cream.

Place the curd mixture in silicone molds and place in the microwave. Turn on the oven at maximum power.

Bake the curd pudding for 3 minutes. Then turn it off and let it sit in the microwave for 2 minutes. Turn on the microwave again and bake the pudding for another 2 minutes. In total, the cooking time will be 7 minutes.

Tender and tasty curd pudding, prepared in the microwave, is served with sour cream, jam or honey.
