To keep your diet varied during any diet, don’t forget about desserts. Among modern diets, one system is the most loyal in this regard and offers not only delicious, but also quick desserts. According to Dukan, and it is his recipes that will be discussed, sweets are prepared from low-fat products and only with sweeteners.
You can learn more about the Dukan diet by reading. It describes the three main stages of the diet and provides a list of allowed foods. During the stage you can eat some Dukan desserts. “Alternation” and “Fixation”, of course, involve the consumption of delicious dietary sweets.
Using the list of allowed foods as a basis, you can very easily prepare dessert for yourself. Just remember to use a strictly defined amount every day. What I mean is that if you are going to prepare a delicacy, then take the ingredients for it from the total amount of daily products.
For those women who cannot come up with a dessert on their own, we have selected several proven recipes.
Chocolate desserts according to Dukan
Truffles in milk
Delicious truffles, sprinkled with white snow from powdered milk, are prepared without heat treatment.
- Mix skim milk powder (6 tbsp), 12% cocoa powder 12 (4 tbsp), sweetener (2 or 3 tbsp).
- Pour 12 tbsp into the resulting brown powder. skim milk and add a couple of drops of Tiramisu flavoring.
- Stir the mixture until smooth and thick and place it on a silicone sheet. Level it with the same spatula to a thickness of 2-3 ml.
- Place the sheet in the freezer for 15 minutes - during this time the chocolate mass will thicken even more and will not stick to your hands.
- Remove the sheet from the freezer, cut the frozen mass into squares and roll them into balls. Roll each ball in dry milk or cocoa powder.
Chocolate mousse
Cottage cheese and cocoa mousse will delight you with its melting light structure and exquisite taste.
- Rub 250 g of low-fat cottage cheese through a metal sieve.
- Mix 1 raw egg yolk, 2 tbsp into the cottage cheese. dry milk without fat, a teaspoon of any liquid sweetener and 1 tbsp. cocoa powder 12% fat. Add a little vanilla essence or Irish cream flavoring.
- Beat 1 egg white until thick foam forms. To make it strong, add two drops of lemon juice or a pinch of salt.
- Add egg foam to the cottage cheese with additives and mix the mixture.
- Place the chocolate mousse in bowls and place them in the refrigerator to set the dessert.

For the biscuit:
- Dr Oetker pudding – 4 tbsp (4 DOPs)
- eggs - 6 pcs.

For cream:
- 400-500 g soft low-fat cottage cheese
- sugars

- a little skim milk or natural yoghurt - 50 ml
For the glaze:
- 2 yolks
- 1 tsp low-fat cocoa 11% (1 DOP)
- 1 tbsp. SOM 10 g (1/3 DOP)
- 1 tbsp. soft cottage cheese
- sugars
Preparation:
- Let's start our Dukan cake by preparing chocolate cakes.
- We will bake two cake layers separately, so it is better to prepare the dough for the cakes separately.
- For one cake we need 2 tbsp. pudding, 3 eggs, 2 tsp. baking powder, sugar, a pinch of salt.
- Separate the yolks from the whites and mix them with the remaining ingredients until a homogeneous consistency is formed.
- Mix the yolk mixture until smooth.
- Beat the whites to strong peaks with a pinch of salt.
- You should get VERY strong peaks - the spoon should stand.
- Carefully fold the whites into the yolk mixture so that they do not fall off. Pour into a suitable mold (mine is 18 cm in diameter) and bake at 180 C until dry.
- Remove from the oven and cool on a wire rack.
- We also prepare the dough for the second cake layer and bake it.
- Cut the cooled cakes in half lengthwise with a sharp knife. We get 4 cakes.
- For the cream, beat all the ingredients. If your cottage cheese was thick, add milk or yogurt until the mixture reaches the consistency of cream.
- We assemble our cake, greasing each layer with cream. Do not grease the top of the cake with cream.
- Preparing the glaze. To do this, mix all the ingredients very thoroughly so that there are no lumps left. Cover the top of the cake.
- And put it in the refrigerator to soak and harden!
Milk dessert according to Dukan
Prepare a delicate dessert from milk and gelatin like this...
- Pour 10 g of instant gelatin into a glass of milk with a fat content of no more than 15%. Let it swell for 10 minutes.
- Pour the milk and gelatin into a ladle and add so much more milk to make a total of 0.5 liters.
- Add also 6 scoops of FitParad and a pinch of vanilla sugar.
- Stir the mixture and place on the fire to heat - do not boil.
- Divide the hot mass into two parts and let cool to 50 degrees.
- Add 1 tsp to one part. low-fat cocoa powder and whisk the mixture until fluffy.
- Do the same with the white mixture.
- Place the brown and white mixture in layers in bowls and let the dessert harden in the refrigerator.

Ingredients:
- 1 tsp low fat cocoa,
- 1 tbsp. skim milk powder,
- 1 yolk, sweetener or vanillin.
Cooking method:
Mix cocoa, milk powder and egg yolk. Add vanillin or sweetener, mix all ingredients thoroughly. Place the mixture in the refrigerator to harden. Nutella can be used as a glaze, topping, or just for decoration.
Dukan's curd dessert called "Cheesecake"
For dessert, first bake the crust in a Teflon pan. For it, mix:
- egg - 1 pc.;
- skim milk - 3 tbsp;
- oat bran - 2 tbsp;
- wheat bran - 1 tbsp;
- cocoa powder - 1 tbsp;
- baking powder - 1 tsp;
- sugar substitute - 3 tablets.
Bake the cake covered and turn it over once. When it is ready, set it to cool and make the cream at this time.
- 1 tbsp. gelatin pour skim milk in the amount of 100 ml. Let the gelatin swell, and then heat the mixture in a steam bath, adding vanilla sugar to it.
- Mix 500 g of zero-fat cottage cheese with one raw egg and a sugar substitute (6 tablets).
- Combine milk with gelatin dissolved in it with cottage cheese - stir until smooth.
- Cover a round pan with sides with cling film. Place the cooled cake on it, and put the curd cream on it.
- After the cream has hardened, cut the cheesecake into portions and sprinkle the pieces with cocoa powder.

- 6 tbsp. l. oat bran
- 2 tbsp. l. milk powder
- 4 tbsp. l. corn starch
- 5 g baking powder
- 40 ml milk
- 200 ml low-fat yoghurt
- sweetener to taste
Mix yogurt with milk and mix with a spoon. Add all dry ingredients. Line a baking tray with baking paper and spoon out the mixture using a teaspoon. Bake cookies for 20 minutes at 175C.

How to prepare an unusual crispy dessert from proteins...
- Turn the oven on to gradually heat to 105 degrees.
- At this time, chop 5 sugar-free candies with a knife or grind in a blender.
- Beat 3 egg whites, adding 5 crushed sweetener tablets. Achieve a stable “peak” consistency of proteins.
- Place half of the whipped egg whites in small portions on a parchment-lined sheet.

Curd soufflé “Dietary”
Ingredients:
1 tbsp. skim milk 250 g. skim cottage cheese 1-2 tbsp. any gelatin (with 2 tbsp the consistency is more like jelly, and with 1 tbsp the consistency is more like a soufflé) 1 tsp. vanillin saxam to taste (if you are not on the Dukan diet, you can add a little sugar) 0.5 lemon (you can do it without it, it will taste milky, like ice cream) 1 tsp. cocoa
Preparation:
1.Put the milk on the stove to heat.
2.Add 1-2 tbsp to cold milk. gelatin and stir everything vigorously with a whisk.
3. While the milk is heating up, place the cottage cheese, sakhzam, and vanillin in a blender and beat well until smooth and creamy, add the juice of half a lemon and blend again.
4. While you were making cottage cheese, don’t forget to mix the milk with gelatin. Don’t bring it to a boil!
6. Pour half of the resulting mass into a bowl and put it in the refrigerator.
7. Add 1 tsp to the remaining portion. cocoa and mix. Pour the chocolate mixture into another bowl and put it in the refrigerator.
8. I made dessert in the evening and enjoyed it in the morning. You can eat directly from the bowl, or you can dip the bowl in hot water for 2-3 seconds and turn it over onto a plate.

Well, I was itching: what if... I tried to implement it in a dietary version? I, of course, read more than once that it is impossible to make meringue without sugar, that it crumbles, is fragile, etc. Well, I’m thinking: what if meringue with stevia works? What am I risking? two proteins? It was, it wasn’t! I made “meringue”, or rather something similar to the recipe above, only not with sugar, but with 1 tbsp. stevia. I baked two such cakes, as it is written there, for an hour at 100 degrees.
Of course, they turned out to be fragile; I barely managed to remove them from the paper without breaking them.
Well, then we had to fill them with cream. cream for pavlova - whipped cream. Well, where is Dukan and where is the cream? We are no strangers to this; we have experience with tiramisu. Philadelphia, unfortunately. There wasn’t any, I made do with regular low-fat soft cottage cheese. everything is the same as for cottage cheese soufflé, only smaller quantities. I mixed a teaspoon of gelatin with 100 g of milk, waited a little until it swelled, then heated it in the microwave, not to a boil, until the gelatin dissolved. I put a pack of cottage cheese “village house” (250 g) into a blender, added stevia with vanilla and gelatin milk. I whipped it all together and poured it into the meringues. it turned out a bit runny. The author of the original recipe warns that there is no need to fill the meringues in advance - they will get soggy. but, taking into account some of the defectiveness of the dietary meringue, plus the fact that there is gelatin in the cream, I deliberately did this in advance. I left it in the refrigerator for a couple of hours for the soufflé to set. I ate it with a spoon, nothing was crunchy anymore, of course, but the dessert turned out to be the most tender and absolutely Dukan-esque - pure protein. Real Pavlova should be decorated with fruit. My dessert is decorated with confiture of carrots and goji berries. or jam, I don’t know what to call this spontaneous work that I accidentally created.

Dessert “Floating Island” according to Dukan’s signature recipe
Prep: 5 minutes - Cook: 5 minutes Number of servings: 4 - BW stage - Attack
Ingredients:
4 eggs 1 pinch of salt 1/2 liter skim milk 1 vanilla bean 2 tsp. powdered sweetener
Preparation
"Floating Island":
Break 4 eggs and separate the whites from the yolks (reserve the yolks for the custard). Add a pinch of salt to the whites and beat them into a thick foam. Using 2 tablespoons, form the egg white mixture into balls and place in a microwave-safe dish, leaving even spaces between each ball.
Bake in the microwave: at a power of 900 W - 40 seconds, at a power of 1100 W - 30 seconds. Put it in the refrigerator.
Custard:
Heat ½ liter of skim milk with vanilla bean. In a large bowl, mix 4 yolks with 2 tsp. sweetener. Slowly pour in the hot milk, stirring with a wooden spoon. Pour everything into a saucepan and, without bringing to a boil, heat the mixture over low heat until it thickens. Pour the cream into a bowl or salad bowl and cool. “Native spaces” according to Dukan
Thanks to Lyudmila Buchenkova: she suggested the idea of coating truffles in bran. The resulting candies are very tasty. Using this recipe, you can also make truffles without bran, simply rolling them in cocoa. Important: Make sure that the tofu and cocoa do not have any unpleasant aftertaste, otherwise the taste of the candy may be disappointing.
Tofu truffles a la “native spaces”
First you need to prepare the waffle crumbs. To do this, mix
2 tablespoons oat bran 2 tablespoons liquid milk 1 measuring spoon fitparad (or other sugar) salt on the tip of a knife
The mixture should be left for 10 minutes to swell. Then place a thin layer (no more than 0.5 cm) on a plate, compact it and put it in a micro for 2.5-3 minutes at full power. During this time, the shortbread should set and turn into a “waffle.” Let it cool and remove it from the plate using improvised means. Next, the waffle needs to be crushed; it was more convenient for me to do this first by hand and then with a rolling pin, placing the waffle in a bag.
For the truffle mass
100 g firm tofu 1 tbsp vegetable oil (or Vaseline) 2 tbsp. spoons of skimmed milk powder (can be replaced with whey protein that suits your taste, then you need to reduce the amount of sakhzam) 8 measuring spoons of fitparad (or other sweetener) 2-3 teaspoons with a large heap of cocoa (one such full spoon contains 7 g of powder)
Place tofu and butter in a blender bowl and blend until smooth and creamy. Add COM and sweetener, beat again. Then add cocoa and also beat with a blender - when adding cocoa, the mixture will thicken noticeably. You can mold the candies right away, but if you let the mixture sit for at least 10 minutes, they will be easier to mold. Divide the resulting truffle mass into about 10 pieces and roll in waffle crumbs.
These ingredients make 10 decent sized candies (about the size of Ferrero Rocher).

There was something about all three recipes that didn’t suit me. I'm tired of the soufflé, the clouds... too... clouds:mosking: i.e. They were too airy or something, I didn’t have enough tangibility in them, and I didn’t like the buttercream because it was too... tasty, and it contained 6 spoons of SOM - double the norm. Immediately after cooking, the whole thing was eaten, along with the blender. Well, I compiled my own version impromptu:
250 ml skim milk 10 g instant gelatin (1 sachet of Dr. Otker fits perfectly) Image 1 pack of cottage cheese (200 g) I have Dmitrovsky, just please don’t open my eyes to the fact that it is not natural and harmful, I know me too it doesn't matter. Image 3 tbsp. COM sweetener to taste (I wanted it sweeter, I have 5 g of fit parade) vanilla in any form flavoring (optional) coloring (optional) the tools you need are a good mixer, a container for whipping with high sides, a container into which we will pour the mixture for hardening (I have a silicone mold, you can just line any tray with film).
Pour gelatin into a saucepan, add milk, stir, leave for 5-10 minutes. then turn on the heat and, stirring, bring the gelatin until completely dissolved. do not boil! heat up to 50 degrees. You can check with your finger - it’s quite hot, but you won’t burn yourself yet. add sweetener, vanilla, flavoring and coloring, stir.
Pour the resulting mixture into a mixing container and cool to room temperature.
When it cools down, start beating first at low speed, then at higher speed. In theory, it should all whip into a stable foam. then add cottage cheese and milk powder, continue beating everything together until smooth.
Then continue as usual. transfer (I succeeded - pour) the mass into a mold or molds and place in the refrigerator for several hours or overnight. if it is not a curly shape, but a square one like mine, put the formed soufflé out of it and cut it into cubes with a very sharp knife, rinsing it after each cut. the soufflé turns out to be the most tender and airy, but still more tangible than the original “clouds”.

Irina Kuzovkova “Yellow Miracle” based on marshmallows 250 g pumpkin 150 ml kefir 100 ml milk or water 10 g gelatin (you can take more) Sakhzam Aromik (I have apricot) or vanillin Pour gelatin with milk or water to swell. Carrot ice cream with coconut glaze

For glaze: 400 ml coconut milk or Sakh zam cream to taste
Boil the carrots, preferably steamed. Grind with a blender. Add the remaining ingredients and beat with a mixer until fluffy, 5-10 minutes. You can do without gum, but then you won’t be able to beat it until fluffy. Pour the mixture into molds and freeze for 3-4 hours. Mix coconut milk or cream well, sweeten to taste and pour into a tall glass into which you can freely dip the ice cream. After 4 hours, remove the frozen ice cream from the molds, dip it into the coconut mixture, take it out, let it drain a little and put it in the freezer to harden. This procedure can be repeated as many times as desired. I had very thin, low-fat milk, so I did this about ten times. If you take coconut cream (just mix it very well, since the butter often separates from the milk in the jar), it has a high fat content, one or two times is enough to cover the ice cream with a thick layer of glaze. I also sprinkled with carrot pieces. It's so sunny-orange inside!

Basil ice cream with honey
Ever since I ate basil ice cream in Rome, it has been on my mind. It was something so incredible that words cannot describe it. And so I repeated it... Of course, in my own healthy version. But when a piece of this ice cream melts on your tongue, you close your eyes and find yourself there again, on Via della Maddalena...
Serves 4

PUMPKIN JELLY (alternating, can be used as a layer in a cake)

Boil the pumpkin for 5 minutes over low heat under the lid, the main thing is not to overcook it so that the cubes keep their shape (I checked with a toothpick). Next, pour in the pre-soaked gelatin and heat until it is completely dissolved. Try it so that the taste is pleasant, rich, sweet and sour. Cover the prepared pan with cling film, pour out the mixture, cool and put in the refrigerator until hardened.

Boil milk with spices. Beat the yolks with sweetener until the mixture turns white. Slowly pour the yolks into the milk, stirring. Cook for 12 minutes over low heat. Filter from spices, add cottage cheese and refrigerate. Serve chilled.

The recipe is designed for cooking in the oven. You need to turn it on first and heat it up to 160 0C. Then take 5 eggs, separate the whites from the yolks. Mix the latter with 600 g of low-fat granular cottage cheese, vanilla on the tip of a knife and a sweetener to your taste.
Use a fork so as not to lose the valuable structure of the curd. At the end, carefully mix the mixture with the whipped egg whites, pour the dough into a baking dish and place it in the oven for 45 minutes. The top should be browned but not burnt. If the crust is too baked and the center is raw, cover the pan with foil.

How to prepare such dietary dishes?
Casserole is a light cottage cheese dessert according to the Dukan diet; it can be prepared in various ways, in the oven, in a slow cooker, in the microwave, with bran, cottage cheese, milk, cocoa, carrots and chicken.
The classic casserole is suitable for all phases of the diet; to prepare it you will need the following ingredients:
- low fat cottage cheese - 400 g;
- chicken egg - 4 pcs.;
- chicken fillet - 400 g;
- bran - 4 tbsp. l.;
- baking powder - one third of a teaspoon;
- salt.
Next, you need to grind the cottage cheese with yolks and bran, add salt, and let the mixture brew for 15-20 minutes. Add baking powder and finely chopped chicken fillet to the mixture. Beat the egg whites with a mixer and add at the very end.
Blot the baking dish with a napkin with a small amount of butter, transfer the contents into it and place in a hot oven for 40-50 minutes. The temperature must be maintained in the range of 180-200 degrees.
The casserole can be made multi-colored by alternating layers with the addition of cocoa, strawberries, beet juice, or other natural dye. Such dishes will be useful for children, especially those with problems with the digestive system.
The following recipe for making a casserole will allow you to do without bran; to prepare the dish you will need 300 g of cottage cheese, 2 eggs, 30 g of milk powder and the same amount of corn starch.
You also need to add salt on the tip of a knife and vanillin, combine all the ingredients, carefully knead the dough very carefully, grease the bowl a little, transfer the mixture into prepared forms, bake for 40 minutes.
In the microwave
In the microwave you can prepare a delicious cupcake according to the Dukan Diet recipe. Take eggs (3 pcs.), corn starch and oat bran (2 tbsp each), low-fat yogurt (100 ml). Add sweetener to taste (0.5-1 tsp). You will also need baking powder (2 tsp) and orange extract (1 tsp).

It is necessary to mix all the ingredients well until smooth, adding oat bran last. Transfer the mixture into a microwave-safe form and cook at 500 W for about 4.5 minutes. To make the dish airy, separate the egg white from the yolk.
