  • Rice flour – 3 tbsp. l.

Preparation:

  1. In a mixing bowl, combine cottage cheese, egg, flour and salt. Knead the mixture with a spoon until smooth. The mass should be quite dense and stop sticking to your hands.
  2. Then, using a spoon, take a piece of dough and form a small ball with your hands. Next, we flatten it and shape the edges. Thus, the products should have a diameter of 3–4 cm. From the finished volume of dough, I got fourteen cheesecakes.
  3. Throw a piece of coconut oil onto a preheated non-stick frying pan. There should be so much of it that a small puddle eventually forms.
  4. We lay out the formed blanks. Bake over medium heat without covering with a lid. We look at them, when they turn brown, we turn them over. We do the same on the other side.

  3. Next, you need to heat the oven to 170°C, place the pan with cheesecakes in the oven and bake them for 25 minutes.

What can I add?

  1. Lightly mash the cottage cheese with a fork. Cottage cheese is suitable for any fat content, but it is advisable that it is not too sour. Beat one egg, add powdered sugar, salt, semolina, rice flour. Mix the mixture thoroughly and leave for 10–15 minutes.
  2. Next, with slightly damp hands, form a ball. Place on a cutting board, press lightly on top, and shape into desired shape.
  3. Pour a little vegetable oil into a non-stick frying pan and heat it well. You can also use melted butter for frying if desired. Place the items one at a time onto the frying pan. First, fry on one side over fairly high heat. Then turn it over and fry on the other side until golden brown.
  4. Now we place the curds on a baking sheet or baking dish, having previously covered the bottom with parchment paper. Place the pan in an oven preheated to 200 degrees and cook for 6-7 minutes until done. After we take it out, let it cool a little.

  • Ricotta – 400 g.
  • Chicken egg – 1 pc.
  • Rice flour – 2 tbsp. l.
  • Raisins – 35 g.
  • Baking powder – 1 tsp.

Preparation:

  1. Wash the raisins thoroughly and drain the water. In a bowl, combine the ricotta with the egg, flour and baking powder. Using an immersion blender, beat the mixture until smooth. Then add the washed raisins and mix everything with a spoon.
  2. Using your hands, form small balls from the curd mass. Roll them in corn breading. It is not necessary to use it; I do this so that the cheesecakes turn out a bright yellow color. You can take the same rice or, for example, oatmeal.
  3. Cover the baking sheet with a non-stick mat. If you don't have one, you can use foil or parchment paper.
  4. Place the pieces in an oven preheated to 180 degrees for 20 minutes. After this time, take it out, turn it over and bake for another 15 minutes.

  1. For this recipe, it is very important to use low-fat cottage cheese, preferably 5 percent. We add a sweetener, sugar or its substitute. Mix everything well with a masher. Next, add flour and thick sour cream. At this stage, if desired, you can also add a little vanilla or cinnamon for taste.
  2. Next, carefully make the cheesecakes and roll them in breading on both sides. To do this, I additionally use a couple more tablespoons of rice flour. By the way, in this form they can be frozen and then fried.
  3. Fry in a heated frying pan greased with olive oil. It is not necessary to cover with a lid while frying. After a couple of minutes, turn the products over to the other side.

Point No. 8: deboning

It is not necessary to roll cheesecakes, especially those made from well-seasoned dough. But if you roll them, they will look much more elegant. The thinnest crust is made from corn starch or rice flour - they instantly form a dense layer on the surface, and the excess is easy to shake off. It is better to roll the cheesecakes immediately before frying. The size of the cheesecakes and their thickness is a matter of your taste. The smaller the cheesecakes, the more “reliable” they are in terms of wheel alignment.


It is not necessary to roll the cheesecakes. But the rolled ones look much more elegant. The thinnest crust is made from cornstarch or rice flour.

Salty cheesecakes on rice flour with herbs

Unsweetened snack cheesecakes with green onions and dill. They are easy and quick to prepare, so they are convenient to serve for breakfast. Their main advantage is that they do not stick to the sides.

  • Rice flour – 420 g.
  • Chicken eggs – 2 pcs.

Preparation:

  1. Beat the eggs into a bowl with cottage cheese. Add sugar, salt. Using a masher, grind the curd mass until creamy. Next, sift the rice flour here and mix again.
  2. Let's move on to the remaining ingredients. Finely chop a small bunch of green onions and dill. Add chopped herbs and spices to the curd dough. Mix everything thoroughly until all components are combined.
  3. Take one tablespoon of curd dough and form into pieces. Then we roll them in breading.
  4. Place the future cheesecakes in a hot frying pan with vegetable oil. Fry on both sides until characteristic golden brown. Another important point: when the products are ready, immediately transfer them from the frying pan to paper napkins to remove excess oil.

PP cheesecakes made from rice flour with steamed berry filling

Delicious, tender cottage cheese with a spicy filling. For the filling, you can use absolutely any berries - it could be cherries, currants, strawberries, raspberries. In general, take what you like best. The good thing about the recipe is that everything is done very quickly, the dough takes literally a couple of minutes.

You will need:

  • Cottage cheese 5% – 360 g.
  • Eggs – 2 pcs.
  • Rice flour – 3 tbsp. l.
  • Vanilla sugar - 1 dl.
  • Sugar – 1 tbsp. l.
  • Baking powder – ½ tsp.
  • Berries – 100 g.

Preparation:

  1. First, pour the cottage cheese into a deep container so that it is convenient to stir everything. Beat the eggs, add vanilla and regular sugar. You can do it without sugar, but then you need a little salt - it will also be very tasty. Mix the mixture well, the main thing is to break up all the curd lumps.
  2. In a second container, combine rice flour with baking powder. Next, add the flour mixture in two additions to the container with the curd-egg mixture. Mix everything well.
  3. Now the most important ingredient is the filling, I use frozen cherries. Thaw the berries and remove the seeds.
  4. Let's start forming the curds. Take the dough with a tablespoon, put it on your palm, and make a flat cake. Place a few berries in the middle and carefully gather the edges into the center to form a ball.
  5. Place the cheesecakes on the bottom of the steamer. Be sure to leave space between them, since during the cooking process they will increase one and a half to two times. Cover with a lid and cook for about 10 minutes.

Item No. 6: baking powder

In fact, cheesecakes don’t need baking powder - once they rise in the pan, they will still fall off, and this is always very disappointing. But any dough with the addition of baking powder as a result is less dense and softer than without it. So this ingredient is your choice. By the way, the correctly selected ratio of cottage cheese and starch, as well as the temperature regime in the frying pan, helps cheesecakes and casseroles not to fall. Unfortunately, you need more starch. And the fire should be low so that the cheesecakes bake gradually.

Cottage cheese pancakes with rice and coconut flour in the oven

The following recipe is the healthiest and incredibly delicious breakfast option. These cheesecakes can be prepared in advance, placed in the freezer, and then quickly taken out and cooked.

You will need:

  • Cottage cheese – 400 g.
  • Sour cream 20% – 3 tbsp. l.
  • Banana – 1 pc.
  • Coconut flour – 2 tbsp. l.
  • Rice flour – 2 tbsp. l.
  • Sweetener.

Preparation:

  1. Take one ripe banana and cut it into pieces. Afterwards, mash thoroughly with a fork until it turns into a puree.
  2. Add cottage cheese to the resulting mass and mix well. Next, spread the sour cream, add rice and coconut flour. Mix. The mixture should be homogeneous, without lumps.
  3. Sprinkle the work surface a little with rice flour. We spread the dough, form the blanks.
  4. Place the finished curds in a baking dish. Bake in an oven preheated to 190 degrees for about 25 minutes.

Dietary cheesecakes with dried apricots, cottage cheese and lemon zest

Recipe with a minimum amount of flour, no sugar. I recommend using dried apricots, raisins or prunes as a sweetener. The dish is an ideal high-protein breakfast for those losing weight.

  • Cottage cheese – 600 g.
  • Rice flour – 65 g.
  • Eggs – 2 pcs.
  • Dried apricots – 10 pcs.
  • Orange zest.
  • Lemon zest.

  1. Wash the dried apricots and pour boiling water over them. Grate 1/3 of the zest of lemon and orange - this is optional, but it will be very tasty and unusual.
  2. Pour the cottage cheese into a bowl. Beat in chicken eggs, add salt and a little vanilla. Mash everything thoroughly with a fork.
  3. Let's return to dried apricots. Drain the water and transfer the dried apricots into a blender bowl with blades. Add the zest and grind everything to a relatively homogeneous mass.
  4. Transfer the dried apricots to a bowl with cottage cheese, add flour, mix. Let the dough rest for about 10 minutes, then form the cheesecakes.
  5. Heat a frying pan and grease it with coconut oil. Place the curds and fry for 5 minutes on each side under the lid.

An unusual recipe for cottage cheese with a very tasty, delicate banana and chocolate filling. A very interesting combination, be sure to try it.

  • Cottage cheese – 500 g.
  • Rice flour – 40 g.
  • Dark chocolate – 8 pieces.

  1. Take a clean container and pour in the low-fat cottage cheese. Add a pinch of salt, egg yolks, rice flour and banana pieces. We combine everything using an immersion blender. You can do this with a masher or a fork, but with a blender the texture of the dish will be more delicate.
  2. Grind coconut flakes with a coffee grinder. Pour into the curd mass, mix, leave for 15 minutes.
  3. Now take a large flat plate and pour in a couple of tablespoons of flour. Place a small amount of curd dough into it. Using our hands, we form cheesecakes of the desired size and shape. Place the pieces on a cutting board.
  4. Heat a frying pan with a thick bottom and lightly grease it with olive oil. On the lowest heat, fry the curds under the lid until golden brown.
  5. Serve immediately, adding fruit, berries or syrup if desired.

Point No. 2: liquid in cottage cheese

If this is your first time buying the type of cottage cheese described above, I would advise you to put it under a press and see what comes out (or rather, flows out). Take a kitchen “waffle” towel or gauze folded in 4-5 layers, cover the colander, lay out the cottage cheese, cover with the hanging ends of the towel, place the colander in the sink or in a large basin. Place a board or flat plate on the cottage cheese, and on it - the largest pan filled to the top with water. And leave it for a couple of hours. During this time, excess whey will drain. If there is too much of it, next time look for a different cottage cheese. Don't throw away the whey!   2. Place cottage cheese in a work bowl. Add grated cheese, finely chopped spinach, rice flour, egg, salt. Immediately beat this mass with a mixer until smooth and fluffy.
  3. Using a damp tablespoon, divide the mixture into equal parts and place on a lightly floured surface. It is important not to dust the work surface heavily with flour, otherwise it will clog all the cottage cheese and the cheesecakes will not turn out fluffy.
  4. Grease a frying pan with oil and heat over medium heat. Fry the products for 2-3 minutes on each side. Then you can cover with a lid and cook for another couple of minutes until done.

Dietary steamed cheesecakes are rightfully considered one of the best diet dishes. No oil is used to prepare them, which in itself is a huge plus. Surely every housewife has a multicooker that will help in the cooking process. Begin!

  • 200 g low-fat cottage cheese;
  • 2 tbsp. l. flour;
  • 1 egg;
  • 2 tbsp. l. Sahara.
  1. Combine cottage cheese, sugar, eggs and mix until smooth.
  2. Add flour and combine everything again. The mass should be thick and not stick to your hands.
  3. Form cheesecakes, roll them in flour.
  4. In the steamer, place them a couple of centimeters apart to prevent them from sticking together during cooking.

  2. Let's make the apple filling. Peel the sweet and sour apples, grate them and add cinnamon.

  2. Then you need to add wheat flour, previously sifted through a sieve, and knead the dough. It should turn out soft. The dough needs to be divided into several pieces. Apricots must be washed, deboned and cut into halves.
  3. Next, you need to sprinkle the table with flour, put a piece of dough in it, make a flatbread out of it, press it down, place half an apricot in the center and cover with a second flatbread, forming a cheesecake. You need to make the remaining cheesecakes in the same way.

  4. Now you can spread the cheesecakes on a baking sheet lined with parchment, place them in the oven, heated to 180°C, and bake them for 10-15 minutes. Ready cheesecakes should be removed from the mold, cooled and served with sour cream.
